Three lip smacking Diwali sweets!

The most awaited Indian festival is closing in soon. I would like to share some recipes for homemade sweets that you can enjoy with your near and dear ones while watching an array of spectacular fireworks. These recipes include Shahi Kheer, Gulabi Badam Halwa and a unusual take on gulab jamuns with a Peach gulab jamun. Enjoy!

Shahi Kheer 

Ingredients: 
  • 100gms white Makhanas or Lotus seeds
  • 2 tsp ghee
  • 2 liter. Milk
  • 200 gram sugar or as desired
  • 4 tbsp shredded almonds
  • 4 tbsp grated pistachios
  • 2 tbsp raisins
  • 1 tsp green cardamom seeds (powdered)
  • 7-8 strands of saffron soaked in the warm milk

Method:

· Cut makhanas into halves and put it in a saucepan along with ghee.
· Fry over a low heat for about 5 minutes. Cool & grind coarsely.
· Add milk and stir well.
· Leave to simmer for about 40 to 45 min. until milk reduces to half and of a creamy consistency.
· During this period stir from time to time so that milk does not stick to the bottom of pan.
· Now add almonds ,pistachios, raisins and leave for further 10 minutes
· Add saffron and cardamom powder.
· Serve Shahi kheer hot or cold, as desired.

Gulabi Badam Halwa

Ingredients: 

  • 2 cups Almond powder
  • 2 cups Sugar
  • 1cup fresh rose petals
  • 1 cup Ghee
  • 1 cup Milk
  • 7-8 strands of saffron soaked in the warm milk

Method:

Wash rose petals and grind with the milk, keep aside. Heat ghee and almond powder in a heavy bottom pan; roast almond flour on a slow flame about 7-8 minutes. Do not let it burn. Add Rose milk and sugar and fold it. Keep stirring. Sprinkle cardamom powder and saffron. Garnish with almond sliver and silver foil.

Peach Gulab jamun

Ingredients:

  • 1 cup pancake flour 2 cup milk powder
  • 100 ml fresh cream
  • ½ cup peach paste (7-8 dry peach soaked & grind)
  • 1tsp.Cardamom powder
  • 21/2 cup sugar dissolves with 2 cup water & boil.
  • Ghee for frying

Method: 

Mix milk powder and pancake flour with the help of cream. Add ½ tsp ghee and make soft dough. Mix half cardamom powder in the peach paste and half in the sugar syrup. Boil sugar syrup on slow flame. Make a small ball out of dough fill it with peach paste; smooth it with your hands. Fry all the balls till light golden brown and dip in the sugar syrup. Before serving garnish it with chopped nuts & silver foil. You can serve it with Vanilla ice-cream.
