Tabbouleh Salad

Tabbouleh is a healthy, rich and super-green salad with pure Lebanese origins that is known for its spicy-tangy kick. In traditional Lebanese cuisine, Tabbouleh (sometimes spelled and pronounced as Tabouli) is usually served along with Hot Khubz Breads.
parsley salad
4 tablespoons bulgur or cracked wheat
1/2 cup boiling water
1 large bunch parsley, chopped
1 small bunch mint, chopped
5 tomatoes, diced
½ cup seedless pomegranate
2 teaspoons extra virgin olive oil
1tsp. toasted sesame seeds
Juice of 1 lemon
Salt to taste
Place the burgul in a small mixing bowl. Add the boiling water, mix and cover with a lid. Let stand for 1/2 hour then squeeze out any excess water.
Combine the bulgur with the remaining ingredients; toss well and serve with bread.
