BOTTLE GOURD CURRY WITH BENGAL GRAM-
4cups Bottle gourd, cubed in to small pieces
1/2tsp. Turmeric powder
1/2tsp Red chili powder
1tsp. Dry coriander powder
1green chili, chopped
1tsp. Ginger, chopped
1/2tsp. Cumin Seed
Pinch of asafetida, Optional
1tsp. Clarified Butter or Oil
Salt to taste
2tsp. Lime Juice
2tbsp. Fresh Coriander leaves, finely chopped
Wash 2-3 times in the running water, soaked (30min.) chana dal or Split Bengal Gram. Pressure cooks it with Cubed Bottle gourd and 1cup water. Once pressure is off, add salt, turmeric powder, red chili powder, coriander powder and mix well. In a separate fry pan heat clarified butter or oil, add cumin seeds and asafetida, cook till light brown.
Add chopped ginger and green chili in it and mix it with cooked bottle gourd and simmer it for 3-4 minutes. Remove and add lime juice and fresh coriander and serve hot.
