BAIGAN MASALA – (Spicy Eggplant)


6 small size Egg plants

1/2cup yogurt

1/2tsp. cumin seed

1/2tsp. turmeric

Pinch of asafetida

1tsp. coriander powder

1/2tsp.Ginger paste

1tsp coriander leaves, freshly chopped

Salt to taste

2tbsp. Oil

For stuffing

2tbsp. sesame seeds, dry roasted

1tbsp.roasted peanut powder

5-6 Dry Red chills

3tbsp. Coriander powder

2tbsp. raw mango pulp

1tsp. turmeric powder

Salt to taste


Wash & wipe eggplants, Keep aside.

Grind all the dry ingredients of stuffing and mix with mango pulp to make paste.

Cut the cap of egg plants. Make a small crisscross cut at the bottom of the eggplants.  Fill it with stuffing paste.

Heat oil in the fry pan, add cumin seeds and asafetida. When cumin turn light brown add stuffed eggplants and stir. Add salt & cover it with lid. Cook it for 2 minutes. Now mix remaining ingredients with two tbsp. water and add to the eggplants, stir and cook for 3-4 minutes. Remove and serve hot with bread.
