KAJU MATAR MAKKANA (CASHEW & PEAS CURRY WITH LOTUS SEEDS)-

INGREDIENTS:

2 cups of frozen green peas

1cup Makhana, Lotus Seeds, Dry roasted

2 Tomatoes chopped

8 Cashewnuts, whole

2 tbsp. Cashew nut powder

1 cup of milk

1/2cup milk powder

1tbsp. Tomato paste

1tsp. cumin seeds

4 green Cardamoms

1tsp. grated ginger

1tsp. green chili chopped

1/2 tsp. turmeric

1 tsp. Red chili powder

1 tsp. coriander powder

1/2tsp. Garam masala

Salt to taste

Pinch of sugar

2tbsp. Ghee or clarified butter

2tbsp. fresh coriander leaves, chopped

METHOD- 

Heat 1 tsp. of clarified butter or ghee in a pan.

Fry whole cashew nuts in the ghee or clarified butter, add lotus seeds till light brown.

Heat remaining clarified butter in a pan; add cumin seeds and whole cardamom. When its light brown add ginger paste, tomatoes, green chilies and brown it, stirring continuously.

Add peas and fry for 5 minutes. Add all dry powders and mix well.

Add fried cashew nuts, Lotus seeds and milk powder. Cook it on low heat. Add milk and water to adjust the thickness of the curry. Simmer it for 4-5 minutes. Remove and garnish it with fresh coriander leaves. Serve with rice or bread.
