3, Medium size Sweet potatoes or 2 cups mashed sweet potatoes
1cup sugar, or to taste
12 Pistachio nuts
12 cashew nuts
7-8 strands of saffron, soaked in 2tbsp. hot milk
1tsp. cardamom powder
Wash & wipe Sweet potatoes and Microwave it on high for 5-6 minutes. Peel the shin & mash it with masher.
Heat ghee or butter in the non-stick pan, add nuts and lightly brown them. Remove all the nuts and add mashed sweet potatoes. Stir fry this by stirring continuously and pressing down for about 8-10 minutes.
Add Khoya or substitute of khoya (mix 6tbsp. milk powder with 2tbsp. Evaporated milk) and mix it well. Cook for 2 minutes, add sugar, nuts and saffron soaked milk and mix well. Cook it for another five minutes, add cardamom powder and turn off the heat.
Serve hot or at room temperature. Garnish with cashews and almonds. It is very tasty treat for kids also.ENJOY !!!
