PINEAPPLE & TOMATO RAITA

INGREDIENTS:

1cup Pineapple (1/2tin) sliced

2cups Thick yogurt

1Tomato, finely chopped

4tbsp. Sugar

3tbsp. Coriander leaves (finely chopped

1tsp. Black pepper, freshly grounded

Pinch of Black Salt

Salt to taste

METHOD:

Mix yogurt, till smooth with salt & sugar in a bowl. Add chunks of Pineapple, chopped tomatoes, green coriander and freshly grounded pepper. Garnish with coriander leaves and sliced pineapples. Serve Chilled.
