Baigan Bharta is one of the classic north Indian recipes. It is made of roasted eggplant & tomatoes. Roasting makes this recipe exotic and full of aroma. Baigan Bharta mostly made in winter season and serve with hot bread and Dal.



2Medium Size Eggplants

3medium sized Red Tomatoes

3tbsp. Oil

1tsp. Black cardamom, crushed

1tbsp. grated Ginger

1tbsp. Chopped green chilies

1tsp. Turmeric powder

1tsp. Red chili powder

2tsp. Dry Coriander Powder

1tsp. Garam Masala Powder

2tbsp. Fresh Coriander leaves, chopped

Salt to taste


Wash Eggplant and Microwave on high for 3 minutes. Then roast them over open flame until the skin is dark black. Cool and remove skin and mash it completely. Heat oil in a pan and add crushed cardamom seeds. Cook for half a minute and add Chopped tomatoes, ginger, green chilies and cook for a minute. Add all dry powders and mashed roasted eggplants. Cook for six to seven minutes over medium heat, stirring continuously. Add salt to taste and cook on medium heat for five to six minutes or till oil separates. Garnish with chopped coriander leaves and serve hot.
