LENTIL PANCAKES WITH GRILLED CHEESE –
2cups Yellow Lentil, without skin (Moong Dal)
2 green chilies, finely chopped
2tbsp. coriander finely chopped
Salt to taste
1/2cup orange, cubes
2 Tomatoes, sliced
2tbsp. Sweet sauce for serving
1tbsp. Mint Chutney
Oil for making pancakes
200 gm. Cottage Cheese, cuts in to thick stripes
1tbsp. Orange Juice
1/2tsp. Black pepper, powder
1tsp. Chat Masala
1-Mix all the ingredients of marinade in the bowl and marinade stripes of cheese. Keep this in the fridge for 1-2 Hours.
2-Wash & rinse yellow lentil and soak them for 1hour in the hot water. Grind in to a fine paste.
3-Add salt, green chilies, chopped coriander into this, mix well, and add enough water to make thin batter.
4-Heat a nonstick flat bottom pan, pour a spoon full of batter in the center and spread it for making pancake, drizzle 1tbsp. oil around the edges and cook on medium low heat. Flip it and cook from another side till light brown. Make all pancakes in the same process.
5- Grill marinade cheese stripes on the same fry pan, till brown & crisp.
6- For plating arrange cheese stripes and folded pan cakes with tomato slices and cubed oranges.
7- Top with both the sauces and some chat masala. Serve hot.
