CORN CAPSICUM STIR FRY

INGREDIENTS

1 cup corn, frozen

1 medium sized Capsicum, chopped

2 small Tomatoes, chopped

1tsp. Ginger paste

2tbsp. Oil

1/2tsp. Turmeric powder

1/2tsp. Mustard seeds

1/2tsp. Red Chili powder

1tsp. Coriander powder

2tbsp. Fresh coriander chopped

3tbsp. fresh Coconut grated

Salt to taste

METHOD-

Soak frozen corn into hot water for 10minutes.Heat oil in the pan, add mustard seeds. When it started to crackle add turmeric, red chili powder, and fresh coconut. Stir fry foe a few second, add capsicums and sauté. Add corn and tomatoes and cook, stirring continuously add salt, coriander powder, ginger paste. Mix and cook on low heat for 3-4 minutes. Garnish with fresh grated coconut and serve hot.
