MOONG DAL HALWA

Moong dal halwa is one of the traditional dishes, prepared at the time of Diwali festival. This mouthwatering rich Halwa is very much time-consuming and need lots of time. Here I am sharing my fuss free cooking of making Moongdal Halwa.

INGREDIENTS

2 cups presoaked Yellow Moong Dal (Green Gram without Skin)

2 cups Sugar

1 cup Ghee

½ cup Milk

½ cup Mawa or Khoya

1tsp. Cardamom Powder

4-5 strands of saffron soaked in the milk

3 tbsp. Chopped nuts, (Almonds, Pistachio)

 METHOD

1-    Wash 5-6 times soaked Dal into running water.

2-    Grind Dal using very little water in the blender.

3-    Heat a flat pan and smear with 1 tbsp. ghee.

4-    Spread a thick pan cake of grinned Moong dal and cook it from both sides.

5-    Remove and mash it finely.

6-    Heat remaining ghee in the heavy bottom pan and add mashed Moong dal pancake, sauté.

7-    Stirring continuously, over medium low heat till dal turns golden brown.

8-    Meanwhile make sugar syrup in the separate pan with sugar and 1cup water.

9-    Add Mawa in the cooked dal and mix well. Mix sugar syrup, milk cardamom powder and soaked saffron.

10-Stir well till dal absorbs all water and leaves the sides of the pan.

11 – Serve hot and garnish with chopped nuts.

Parwal belongs to gourd family, light green in color known as pointed gourd. Parwal is a good source of digestive enzymes.

This vegetable is good for people who are suffering with Jaundice because of low-fat and easy to digest. It is helpful for purifying blood and stimulated belter function of Liver. Here I am sharing very easy recipe of making Aloo Parwal.

 

INGREDIENTS

8-10 Pointed Gourd or Parwal, scraped

2 Medium Sized Potatoes, peeled

1 tbsp. Olive Oil

1tsp. Cumin seeds

1 tbsp. chili powder

1 tbsp. turmeric powder

1 tbsp. coriander powder

1 tsp. dry mango powder

Salt to taste

 METHOD

1. Wash Parwal and potatoes and cut in to thin slices.

2. Heat oil in a pan and add  cumin seeds.

3. When the seeds crackle, add turmeric and potatoes slices and sauté for 5 minutes.

4. Add Parwal and salt mix well, cover and cook for 2 minutes.

5. Turn off the fire and keep it cover for 2 minutes. It will cook in the steam.

6. Heat again; add all the powders and cook covered for 3 minutes or till potatoes are done.

7. Serve hot with Roti or Brown Bread.

Try this egg less recipe & enjoy the mini cup cakes.

INGREDIENTS

1 1/2 cup All-purpose flour

100 gm. Butter, unsalted

1 tsp. baking powder

1 tsp. baking soda

100 ml. Milk

3/4 cup powdered sugar

1/2 cup strawberries, sliced

21/2 tbsp. Yogurt

1tsp. Strawberry Essence

2 drops of Pink food Color

METHOD

1-Sieve the flour twice with baking powder and soda.

2-Mix Butter with sugar on stand mixture, add yogurt and milk. Beat till creamy and soft.

3-Add flour in the batches, keep mixing. Add sliced strawberries, food color & essence.

4-Pour the mixed cake batter with spoon in the cupcake tin and bake at 170 degree C pre heated oven for 25 to 30 minutes.

Once the cupcakes are completely cool, ice them with the frosting or eat them as they are.

STRAWBERRY BUTTER CREAM

INGREDIENTS

50 gm. Butter

½ cup Icing Sugar

2tbsp. Strawberry Sauce

1tbsp. colored Sugar balls for toppings

METHOD

Beat butter at medium speed with an electric mixer for a minute or until smooth. Mix in powdered sugar and 1tbsp.strawberries sauce and beat until smooth and creamy. You can adjust the consistency by adding more sugar if frosting is too thin or strawberries sauce if it is too thick. Top with colored sugar balls and drop of strawberry sauce, serve these Mini Treats.

 

RABREE

RABREE

Rabree is a dessert, made of milk . Originally milk is boil on low heat till thick and changes its color to light pink.

As the layer of cream begins to form on the surface of the milk, it is taken off and kept aside. The process continues until the milk is reduced one-fourth. Rabree can be eating as it is or can be served with Malpua ,Jalebi or Falooda.Here is my recipe of Kesari Rabree for the celebration of Sharad Poornima, festival of Full moon Day.  On this day, many places, temples, Rabree, kheer, poha-Rice flakes with Milk are prepared and kept in moonlight throughout the night and consumed the next day as Prasad.

INGREDIENTS

1.5 liter Full cream Milk

80 gm. Sugar

9-10 Pistachio, Finely Sliced

7-8 Almonds, Finely Sliced

4-5 Strands of Saffron

1tsp. Cardamom Powder

METHOD

1-Boil milk in the heavy bottom pan than reduce the heat on slow and cook it for 1 hrs.

2-Cook it continuously on low flame till it turns thick. Keep stirring so that the milk doesn’t get burnt.

3-Add sugar and nuts, keep stirring.

4- Mix saffron with 2 tsp. of warm milk.

5- Add cardamom powder and saffron and mix well.

6- Cool and serve with sliced pistachio.
