GOLDEN POTATO SOUP WITH ROSEMARY

Nice rich & creamy Potato soup with saffron & rosemary flavor, try to make this & enjoy the taste.  Golden Potato soup is perfect for the autumn season.

 

INGREDIENTS

2 small size Potatoes, peeled & cubed

1tbsp.Butter

1tsp. Olive oil

1tsp. Black Pepper, whole

1tbsp. Plain flour

½ cup Milk

2cups Stocks

2 sprig of Rosemary

4-5 strands of Saffron, soaked in hot water

Salt to taste

1tbsp. Fresh cream for garnish

METHOD

1-Heat butter in the pan adds potatoes, sauté for 2-3 minutes till glossy.

2-Add olive oil and flour and stir continually.

3- Add stocks and salt & pepper. Cook it 7-8 minutes or till potatoes become tender. Remove from fire.

4-Blend this half-cooked soup with hand blender or in a food processor and pass through strainer.

5- Return the soup on heat and add soaked saffron and milk. Stir over low heat until it gets rich & creamy texture.

6-Garnish with cream & chopped fresh rosemary, serve hot.
