ROASTED SWEET POTATO SALAD WITH GRILLED KIWI
2 Medium Sized Sweet Potatoes
2 Kiwis, peeled & sliced
1tbsp. Lime juice
2 tbsp. Olive Oil
Salt to taste
1tsp. Black pepper, grounded
1tsp. Cumin powder
½ tsp. Clove powder
½ tsp. Cinnamon powder
Microwave Sweet potato with skin for 3 minutes on high. Remove and cool. Peel skin and cut in to roundels.
In a tray place sweet potatoes, drizzle with olive oil and season well with salt & pepper, place in the oven for 20 minutes.
Heat a flat pan and grease with oil, arrange kiwis for grilling. Grilled kiwi slices from both sides for 1 minute and remove.
Mix all the ingredients of dressing, toss grilled sweet potatoes & kiwis and arrange in the plate. Garnish with finely chopped mint leaves. Serve.
