GOL GAPPE (Street Food of India)
Gol Gappe or Pani Poori is very famous Street food of India. Every nook & corner of all cities you can get these at the Chat wala’s stores.
It is known by different names in different states of India, the most popular ones are Pani Poori,Puchka and Gol gappe. Golgappas are easily available in all restaurants as well as on the roadside. Standing by the road and eating these Tangy Water balls is a different kind of experience.
You can make this at home and enjoy these crunchy little puffs easily. Serve this with stuffing of boiled potatoes, chickpeas & Sprout Moong, Bondi with a tangy Jal Jeera, Pani.
1cup Fine Semolina
1 cup wheat Flour
½ tsp. Salt
Oil for frying
1 can of Soda water to knead the dough
1-Mix semolina, wheat flour, 2 tbsp. oil and salt into a semi stiff dough with soda water.
2-Cover this or wrap it with wet muslin cloth and keep aside for 30 minutes.
3-Make small balls of coin size with this dough. Roll each one with rolling pin in to round shape.
4-Heat oil on high heat than reduce. Fry all these small poories in the batches from both sides.
5- Use frying spoon to make them puff by pressing lightly.
6-Drain and keep on kitchen towel to absorb extra oil.
Cool and stuff with finely chopped boiled potatoes & chick peas. Serve with Tangy Jaljeera Pani.
JAL JEERA (Tangy Water)
1 cup chopped Mint leaves
1 cup Coriander leaves
2 green chilies
1 inch Ginger, sliced
¼ cup pulp of raw mango or tamarind
1tsp. Chat masala powder
½ tsp. Dry roasted Cumin seed Powder
Salt to taste
Pinch of Cinnamon powder
Pinch of Clove powder
Pinch of Black Salt
2 tbsp. Readymade Boondi
1-Except Boondi grind everything in the blender with little water till smooth paste.
2-Transfer the paste in the sieve and add 4 cups water to pass it through sieve.
3- Keep this water to cool in the fridge for 20 minutes.
4- Mix well with Spoon and add readymade Boondi. Serve with Gol gappe.
Poke a small hole in the center of each Gol Gappa, with finger. Fill with small quantity of boiled potatoes, Chick peas, sprout Moong or soaked Bondi and dip in the Tangy water and eat it quickly.
