 EGGLESS CHOCOLATE CAKE WITH HAZELNUT

INGREDIENTS

100 gm. Cooking Chocolate Bar

125 gm. Butter, at room temperature

135 gm. Powdered Sugar

180 gm. All-purpose flour

2 tsp. Baking Powder

1/2 cup Chopped Hazel nuts

1 tsp. Orange Essence

4 tbsp. Milk

2 tsp. Icing Sugar for Garnishing

2 Strawberries for garnishing, Optional

METHOD

Set 180 degree temperature at oven. Grease 7 inch rectangle cake tin or use Silicone cake Mold. Mix Chocolate with butter on the Double Boiler. Transfer this in the Stand mixture bowl. Sieve Flour, baking powder & sugar. Mix it with chocolate & butter mixture. Mix well with medium speed. Add orange essence and water. Fold with chopped hazel nuts and transfer this in the cake tin. Bake it about 33 to 35 minutes in the pre heat oven. Cool it ten to fifteen minutes.  Sifted some icing sugar and garnish with fresh strawberry slices and toasted hazel nuts.  VEGAN ENERGY BOOSTER DIP: CORIANDER CHUTNEY

Coriander: Very commonly used for garnishing or making chutney in every Indian’s Home. Very rich green color makes it very attractive and it has lots of medicinal value. In Ayurveda chutney defined as a good detox for reducing excess Pitta, because it clears heavy metals out-of-body.

According to Ayurveda, Chutney is also very beneficial for patients suffering from IBS (Irritable Bowel Syndrome). It helps the muscles in the stomach relax and promotes overall digestion. That is why I named Chutney as an Energy booster dip. It is oil free and made of fresh coriander leaves, lime juice & ginger etc. The benefits of eating Chutney are so many like, it helps in digestion, lowering the blood pressure, helps to stimulate memory  and helps in curing anemia. It acts as an anti-inflammatory food.

Coriander leaves are rich in phytonutrients and flavonoids and good source of fiber, iron & magnesium.

Here is very simple & easy recipe of Chutney can be served with any food.

INGREDIENTS

1 bunch of fresh coriander leaves, washed & coarsely chopped

1 inch piece of Ginger

2-3 green Chilies

2tbsp. Lime juice

1tsp. Cumin seed

Pinch of Cinnamon powder

Salt to taste

4-5 tbsp. water

METHOD

Place all the ingredients in the blender except the lime juice and salt.

Scrape the sides and blend till it is smooth. Add more water if required.

Remove from the jar and add salt & lime juice. Mix well and store in the fridge.

You can keep it for 4-5 days in the fridge. Serve with Kebabs or Cutlets as a condiment.

In Australia Cherries are linked with Christmas celebration, but I think, because the color of this fruit is very Christmassy, like Poinsettia plant. The very Red color of Cherry gives the boost of any Christmas feast. Here are some lines from famous song;

These lines indicate that Cherries are the part of Christmas Celebration.

Cherries are available during winter season but the best cherries are available from mid-December until the end of January. The dark Ruby Red color of Cherries is symbol of a fun and festive spirit of Christmas. This fruit balances sweetness and acidity and have lots of nutritious values.

Cherries, part of the stone fruit family that includes apricots, peaches and plums, are one of the few known food sources of melatonin, a naturally occurring hormone that helps to regulate the body’s circadian rhythms and our sleep patterns. Eating cherries may help you sleep better, lose weight and help prevent some diseases, like High Blood Pressure, muscles soreness, and help to combat Cancer. Cherries are high in pectin—a soluble fiber that helps to prevent heart disease by lowering “bad” cholesterol. It has beta-carotene or Vitamin A, which helps maintain eyesight and healthy skin.
