BEST FOOD FOREVER: STRAWBERRY CHEESE CAKE
12 digestive biscuits
2tbsp. butter, melted
½ tsp. vanilla essence
200gm. soft cheese
50g m.icing sugar
1cup double cream
2 drops of pink food color
For the topping
200gm. strawberries, thinly sliced
1tsp. Colored sugar
1tsp. Colored Sugar balls
2 Chocolate Spoon, optional
Grease and line two heart shape cake tins with butter paper. Put biscuits in the plastic bag and crush to fine crumbs with Rolling pin. Mix this crumbs with melted butter in a bowl.
Set this evenly in the cake tins and keep it in the fridge for 20 minutes.
Mix soft cheese with icing sugar in the bowl and beat with hand mixture till smooth. Slowly add cream and vanilla essence in this mixture and continue beating till mixed well.
Spoon this mixture on the set biscuit base, use spatula to smooth the surface. Dip the fork in the pink food color and use to make design as you wish on it. Keep it in the fridge for 7-8 hour to set.
For plating, cover the plate with sliced strawberries and place the set cheese cake on the top of it. Garnish it with colored sugar balls and serve with chocolate spoon.
