Roasted Red Pepper soup is my favorite Soup recipe. This colorful soup is very satisfying and full of nutrients. The Roasting taste of sweet pepper is truly superb. This recipe is Gluten free and dairy free also. Enjoy this freshly roasted Red Pepper soup with lunch or dinner. It can be served warm or chilled, the taste is divine.


2 Red Bell pepper

1 Yellow Bell pepper

2 medium size Tomatoes

2 tbsp. Olive oil

2tbsp. walnut, finely chopped

1tsp. Ginger, grated

Salt & Pepper to taste

1cup vegetable stock

Pinch of Nutmeg powder

1tsp. Fennel leaves, Finely Chopped, Optional


Roast bell papers and tomatoes direct on flame till it slightly burn from outside. Cool and peel the skin. Roughly chopped and grind with walnut and vegetable stock in the blender. Remove from the blender.

Heat oil and add grated ginger. Add pureed soup and sauté for 1 minute. Adjust the consistency by adding 1 cup or more water. Add salt, pepper and pinch of nutmeg powder. Simmer for 6-7 minutes. Serve in the soup bowl and garnish with chopped fennel leaves.
