AVOCADO CHOCOLATE MOUSSE: DELICIOUS VEGAN TREAT

Avocado is a super food. A pear shape green color fruit is high in fat and calories but still is one of the best foods packed with heart healthy compounds. It contains nearly 25 essential nutrients, including vitamin A, B, C, E & K with Iron etc.

I made this gelatin free and dairy free Chocolate Mousse with Avocado and rice milk cream… A super delicious Vegan Chocolate Mousse is very easy to make.

INGREDIENTS

1 Avocado, ripe

½ cup Coco powder

2 tbsp. Almond milk

1tsp. Vanilla powder

½ cup Icing Sugar

1 cup whipped Rice Milk cream

4 strawberries for garnish

1tsp. Chopped Pistachio

METHOD

Blend half of the sugar with rice milk cream and keep in the fridge. Puree avocado with icing sugar, vanilla powder and Coco powder in the blender. Add almond milk and mix well. Layer whipped cream & pureed avocado in the serving glasses. Top with chopped pistachio and Strawberry slices. Chill for 30 minutes and serve cold.

Vegan, don’t consume dairy products; here is very simple and easy recipe of fresh & flavored Almond Milk. This homemade Milk is very easy to make and can be used to make smoothie or shakes.

INGREDIENTS

1/2 cup Raw Almond, soaked, 4-5 hours

1tsp Cardamom seeds

1tsp white pepper

METHOD

Remove from water and rinse soaked almonds. Remove skin and grind this with 2 cups water, cardamom seeds and white pepper. Strain the blended almond milk and chill.

This Almond milk will keep well for 2-3 days in the fridge. You can add sugar according to your taste. This milk is slightly sweet because of Almond.

Yesterday, there was Rain and rain and just rain, it was completely wet Wednesday. The life was on the road was real havoc, Dubai police received more than 700 calls related to road accident, but we can’t separate rain with hot Pakora and Ginger tea. Evening I thought to order some hot snack, but due to rain, home delivery was closed, so in order to enhance the rainy day experience I checked some vegetables in my pantry to make Pakoras. Voila, I had Potatoes, some Eggplants and Mild Green chilies etc. It was more than enough ingredients to make rainy day special. Quickly I made batter and fried Pakoras with hot cup of tea. Lovely weather and drizzling droplets is the perfect time to indulge with this hot & spicy snack.

This is the beauty of rain with hot cup of tea & Pakoras, Comfort cuisine for the taste buds. If you want to enjoy the rain next time; you must try this hot pakoras with chutney.

INGREDIENTS

2 Medium size potato, Peeled & sliced

1 Eggplant thinly sliced

4-5 Green Chilies

2 cups Chick pea Flour

2 tbsp. rice flour

2tbsp. coarsely ground Coriander

1tsp. Red chilli powder

1tbsp. Green Chili, finely chopped

2 tbsp. Coriander, finely chopped

Salt to taste

½ cup water or more for making batter

Oil for frying

METHOD

Toss little salt and chopped green chili with all vegetables.

Mix all the dry ingredients together in the big bowl. Add water to make smooth batter.

Heat the oil in the pan on medium high heat.

Add chopped coriander and 1 tbsp. hot oil in the batter and mix well.

Dip one vegetable at a time in the prepared batter and drop slowly in the heated oil. Drop 7-8 Pakora each batch and fry till golden brown. Repeat the process to make all the Pakoras. Serve hot with Mint Chutney or Tomato Ketchup.

Aloo Gobi Fry is a very popular and authentic dish of Punjab, It is a dry dish with full of aroma & taste. It can go well with any type of bread like Roti, Poori or Parantha.

This movie described that you can’t separate Punjabis with Aloo Gobhi.This simple but robust flavor dish is very much regular of every house’s meal. Every house has different recipe of making this dish. Here I am sharing my simple recipe of Aloo Gobhi fry in Dhaba style: Dhaba is a Road side Restaurant famous for rustic seating arrangement and simple & aromatic food.

INGREDIENTS

Serve: 4

3 medium Potatoes, peeled

2 cups Cauliflower florets wash & dry

2 tbsp. Ginger, finely chopped

2 tbsp. Tomato Paste

2 Green chili, finely chopped

1tsp. Cumin seeds

1tsp. turmeric

1tsp. Red Chili powder

1tbsp. Coriander powder

1tsp. Garam Masala

1tsp. Dry Mango powder

Salt to taste

2tbsp. Oil and extra for frying

2tbsp. Fresh coriander finely chopped

METHOD

Wash Potatoes and cuts into semi thick wedges. Heat the oil in the fry pan on medium high heat. Deep fry potatoes & cauliflower florets in this heated oil till golden brown. Remove and keep on the kitchen towel.

Heat a heavy bottom pan; add oil and cumin seeds, sauté till crackle. Add Green chilies, chopped ginger and tomato paste. Cook for 2 minutes. Add all dry spices, salt and fried potatoes & cauliflowers. Mix Well. Cover with lid and cook this on low heat for 10-12 minutes. Aloo Gobhi will change the color when it’s done and smell divine .Remove and garnish with fresh coriander leaves .Serve hot with your favorite bread.

Today is very sunny day; summer is knocking at the door step so I thought of making Garden fresh Greek salad. Very fresh, nice & bit tangy salad with all fresh vegetables, Greek Salad is made of cucumber, tomato, salad leaves, Feta cheese & Olives. It can be served as a side dish or with some toasted bread or French bread. Hope you will enjoy this very tangy & crunchy Garden fresh Greek Salad.

INGREDIENTS

3 Medium Plum Tomatoes, cubed

2 Cucumbers, cubed

400 gm. Lettuce Leaves

200 gm. Feta Cheese, cubed

50 gm. Black Olives

2tbsp. Olive Oil

1tbsp. Lime juice

Salt to taste

1tbsp. Oregano, dried

1tsp. Toasted Sesame Seeds

METHOD

Place half of the lettuce leaves in the serving bowl and chop roughly the remaining. Combine olive oil, salt & lime juice in a bowl and whisk with fork. Toss with chopped lettuce leaves, tomatoes, cucumber, olives and arrange over lettuce leaves bed.  Add cubed Feta cheese and Sprinkle oregano and sesame seeds, serve immediately.

Tabbouleh is a Middle East salad, traditionally made of bulgur, tomatoes, cucumbers, finely chopped parsley, mint leaves with pomegranate. Here I used quinoa instead of bulgur or couscous to make it gluten-free. Enjoy this lime & full of herbs salad with Green apple crunch.

INGREDIENTS

1 cup boiled Quinoa

1 bunch parsley, finely chopped

½ bunch mint leaves, finely chopped

½ bunch coriander leaves, finely chopped

1 Green apple, grated

2-3 Tomatoes, finely chopped

¼ cup Pomegranates

2 tbsp. Lemon juice

1 tsp. Sesame seeds

2 tbsp. olive oil

Salt and pepper to taste

 METHOD

Heat olive oil and add sesame seeds. Remove and cool, mix with lemon juice, salt & pepper. Wash and rinse all the herbs, leave to drain. Take all the chopped tomatoes, pomegranate, and grated apple in a big bowl. Add cooked quinoa and all the fresh herbs. Toss with prepared Dressing. Serve chilled

POTATO & LENTIL WAFFLES WITH CHERRY TOMATO

Yummy and delicious Potato waffles with grilled cherry tomatoes are perfect for healthy breakfast or brunch. You will need a waffle iron or toaster, here I have used Moulinex changeable plate toaster. These are just potato pancakes but without frying. You can serve this with evening tea also.

INGREDIENTS

Serve: 2

2 cups Potatoes, boiled & mashed

11/2 cup Yellow lentil, soaked & slightly steamed

2 tbsp. Roasted check pea powder

2 tbsp. oil for greasing the waffles iron

½ cup coriander, finely chopped

1tbsp. grated ginger

1tsp. freshly ground white pepper

Salt to taste

1 cup Cherry tomatoes

Tomato Sauce for serving

METHOD

Grind lentil with very little water in the grinder. Combine mashed potatoes with lentil paste and roasted chick pea powder. Mix well and add ginger, pepper, coriander and salt.

Pre heat waffle iron and grease the plates with oil. Spread 3 tbsp. prepared potato mixture into the center of waffle iron and close the lid. Cook it 6-7 minutes or until golden brown.

Heat the pan and add 1tsp. oil in it. Add 1tsp fresh coriander and cherry tomatoes, sauté .Season with salt and serve on the top of prepared Potato & lentil waffles.
