Tabbouleh is a Middle East salad, traditionally made of bulgur, tomatoes, cucumbers, finely chopped parsley, mint leaves with pomegranate. Here I used quinoa instead of bulgur or couscous to make it gluten-free. Enjoy this lime & full of herbs salad with Green apple crunch.


1 cup boiled Quinoa

1 bunch parsley, finely chopped

½ bunch mint leaves, finely chopped

½ bunch coriander leaves, finely chopped

1 Green apple, grated

2-3 Tomatoes, finely chopped

¼ cup Pomegranates

2 tbsp. Lemon juice

1 tsp. Sesame seeds

2 tbsp. olive oil

Salt and pepper to taste


Heat olive oil and add sesame seeds. Remove and cool, mix with lemon juice, salt & pepper. Wash and rinse all the herbs, leave to drain. Take all the chopped tomatoes, pomegranate, and grated apple in a big bowl. Add cooked quinoa and all the fresh herbs. Toss with prepared Dressing. Serve chilled
