Aloo Gobi Fry is a very popular and authentic dish of Punjab, It is a dry dish with full of aroma & taste. It can go well with any type of bread like Roti, Poori or Parantha.

This movie described that you can’t separate Punjabis with Aloo Gobhi.This simple but robust flavor dish is very much regular of every house’s meal. Every house has different recipe of making this dish. Here I am sharing my simple recipe of Aloo Gobhi fry in Dhaba style: Dhaba is a Road side Restaurant famous for rustic seating arrangement and simple & aromatic food.

INGREDIENTS

Serve: 4

3 medium Potatoes, peeled

2 cups Cauliflower florets wash & dry

2 tbsp. Ginger, finely chopped

2 tbsp. Tomato Paste

2 Green chili, finely chopped

1tsp. Cumin seeds

1tsp. turmeric

1tsp. Red Chili powder

1tbsp. Coriander powder

1tsp. Garam Masala

1tsp. Dry Mango powder

Salt to taste

2tbsp. Oil and extra for frying

2tbsp. Fresh coriander finely chopped

METHOD

Wash Potatoes and cuts into semi thick wedges. Heat the oil in the fry pan on medium high heat. Deep fry potatoes & cauliflower florets in this heated oil till golden brown. Remove and keep on the kitchen towel.

Heat a heavy bottom pan; add oil and cumin seeds, sauté till crackle. Add Green chilies, chopped ginger and tomato paste. Cook for 2 minutes. Add all dry spices, salt and fried potatoes & cauliflowers. Mix Well. Cover with lid and cook this on low heat for 10-12 minutes. Aloo Gobhi will change the color when it’s done and smell divine .Remove and garnish with fresh coriander leaves .Serve hot with your favorite bread.
