ZAFRAN ZARDA, SWEET SAFFRON RICE

ZAFRAN ZARDA, SWEET SAFFRON RICE
A traditional age old dish can be served with main course or as a dessert. Simple and easy to cook.
INGREDIENTS
1 cup Rice, Long Grained
3 tbsp. Ghee, or Butter
½ tsp. Saffron strands
1 tbsp. Milk
1 cup Sugar
2 Cloves
8 Cardamoms, green
2 tbsp. Raisins
2 tbsp. Pistachio nuts
2 tbsp. Charoli or Chirongee (optional)
METHOD
1-Wash and rinse rice in the running water. Drain and keep aside.
2- Heat 2 tbsp. Ghee in the heavy bottom pan and add clove, 4 cardamoms and rice, sauté it gently for 2 minutes.
3-Add 1 ½ cups water and Cover with lid. Cook it till al Dante. Remove clove and cardamoms.
4-Soak saffron in the warm milk and grind it smoothly to release the saffron color. Add this to the cooked rice. Add sugar, remaining ghee and nuts .Mix slowly.
5-Powdered 4 cardamoms in the fine powder and add this to the rice.
6-Transfer the rice in the oven proof dish and cover with lid. Set oven at 170 degree centigrade and bake it 25 to 30 minutes. Serve hot or cold.
