LIME PICKLE: SWEET AND TANGY
Lime pickle is oil free pickle, consider as second place in the popularity list. For me this is not a pickle it’s more than pickle because it’s very good for digestion. Sweet and tangy lime pickle is good for heeling stomach pain or gas problem. This pickle is easy to make but takes time to mature. Try and enjoy sweet and tangy lime pickle.
INGREDIENTS

12-14 Limes wash and wiped

2 tbsp. Salt

2 tsp. Black Salt

2 tsp. carom Seeds

2 tsp. cumin seeds

2 tbsp. Black Pepper

1Inch long Cinnamon sticks

7-8 Cloves

4 Black Cardamoms

2 tsp. Red chili powder

2 tsp. Ginger Powder

1 Cup Sugar

METHOD
1-Wash and clean a glass jar with lid.
2- Cut limes in to small wedges; remove seeds as much as you can.
3- Mix limes with both types of salt in the glass bowl.
4-Remove skin of black cardamom and crush lightly all the seeds.
5- Heat a pan and remove from fire add all the dry ingredients except the sugar.
6- Roast lightly in the pan for 3-4 seconds. Cool and grind coarsely.
7- Mix all these spices in the limes. Toss well.
8-Fill dry glass jar with limes and cover it with white muslin clothes, tie it with rubber band. Keep it every day in the sunlight for 5-6 days. Shake the jar alternate day.
9- Add sugar and mix well. Keep it again in the sunlight for 10-12 days.
10- Check the skin of lime if it’s slightly soft, then pickle is ready to eat otherwise keep it 3-4 days more in the sunlight.

INGREDIENTS

1 cup Mango Pulp
1 cup Cream
½ cup Condensed Milk
1tsp. Cardamom Powder

Chocolate sauce for garnish, Optional
Few Cherries to serve, optional
Dough to seal the mold
METHOD

1-Mix first four ingredients and process in a food processor till smooth.
2-Spoon in to the Ice Loll mold, cover and seal it with the dough.
3-Arrange all in the stand and freeze 7-8 hours.
4-Remove from freezer and discard the dough, turn the ice-cream into serving plate.
5- Garnish with Chocolate sauce and serve with cherries.

KNORR CREAM OF BROCCOLI SOUP STUFF PASTA LUMACONI
INGREDIENTS
1 pack of Knorr premium Gourmet Cream of Broccoli Soup
12 pieces of Pasta Lumaconi
1 cup Water
1 cup cream
½ cup Fresh Broccoli, grated
½ cup Red Capsicum, finely sliced
2 tbsp. Olive oil
Pinch of nutmeg powder
7-8 Hazel nuts, slightly roasted
Salt & water for boiling Pasta
Pepper, optional
METHOD
Boil pasta till al Dante with salt & water, drain and keep aside. Heat the oil in the pan on medium high heat and sauté red capsicum and broccoli. Remove capsicum and ¼ of broccoli for garnishing and keep aside.
Mix Knorr soup powder with 1 cup of water in the bowl and add this to sautéed broccoli. Keep stirring and add cream and nutmeg powder. Mix well and cook till it become thick like sauce.
Fill this creamy broccoli sauce in each Lumaconi pasta shell with the help of spoon. Warm in the oven for 1-2 minutes and arrange in the plate with sautéed capsicum slices. Garnish with broccoli and hazel nuts serve hot with remaining sauce. Enjoy the twist taste of Knorr Gourmet Cream of Broccoli soup.

CUCUMBER CURD RICE WITH GUAVA CURRY

INGREDIENTS
1cup Rice
A cup grated Cucumber
1 cup Thick Curd
2 tbsp. Coriander, finely chopped
1tsp. Orange Zest, tied in the muslin clothes
1tbsp. Grated Ginger
1tsp. Mustard seeds
1tsp. Oil
4-5 curry leaves
Pinch of sugar (optional)
Salt to taste
Mint leaves for garnish
METHOD
Wash & soak rice for 10 minutes. Boil 4 cups water with salt, orange zest bag and cook rice till it done. Strain and keep aside for cooling. Remove orange zest bag.
When rice is completely cool add grated cucumber and curd and mix well. Season it with salt and sugar.
Heat oil in the pan and add mustard seeds, when seeds started crackling, remove from heat and add curry leaves and grated ginger. Fold this with curd rice and set in the serving cups. Chill this for 40-45 minutes in the fridge before serving. Garnish with mint leaves and serve with Guava Curry.
GUAVA CURRY
INGREDIENTS
4-5 Medium size Ripe Guavas
1tsp. Ginger, grated
1tsp. Cumin seeds
2-3 cloves
½ tsp. Turmeric Powder
½ tsp. Red Chili powder
1tsp. coriander powder
Salt to taste
3tbsp. sugar
2tbsp. Fresh coriander, finely chopped
1tsp.Clarified butter or Oil
METHOD-
Wash and cube Guava, remove the seeds if it’s there. Heat, Clarified butter or oil in the pressure cooker, add cumin seeds and cloves, when its turn light brown, add turmeric, Red chili powder, coriander powder and ginger, mix well add cubed guavas. Sauté, add 1cup water and salt. Cover with lid and give one pressure to this.
When it is cool add sugar and simmer for 4-5 minutes. Garnish with fresh coriander leaves and serve with Curd Rice
Note; for serving diabetic, make it without sugar.

Cool summer drink made of fresh mint leaves, very refreshing and crunchy.
You can add some cornflakes to make perfect morning drink for summer breakfast.
INGREDIENTS
1 cup, Mint leaves
2 cups Chilled Milk
4 tbsp. Toasted Pecan
2 tbsp. Maple syrup
1 cup Cream
1 cup Pecan Praline Ice-cream or any Butterscotch Ice-cream
Mint leaves for Garnishing
Chocolate shavings for toppings
Method
Wash 2-3 times mint leaves in the running water. Grind mint leaves with pecan nuts and milk. Add cream, maple syrup and ice cream, blend again. Serve in the serving glasses, garnish with mint leaves and Chocolate shavings.
