STUFF SWEET POTATO KEBAB WITH MANGO SALSA AND CUCUMBER YOGURT SAUCE
INGREDIENTS
(For making 4 Kebabs)
1 Medium sized Sweet Potato
1 tbsp. Roasted Gram Flour
1 tsp. Sesame seeds, roasted
1tsp. Lime Powder
2 tbsp. Parsley, chopped
1 tbsp. Ginger, grated
1tbsp. Lime Juice
10-12 Black Pepper, freshly grounded
Salt to taste
2 tbsp. Black Gram, Boiled with salt
2 tbsp. Olive Oil
For Mango Salsa
2 tbsp. Mango, cubed
1tbsp. Red Pepper, chopped
1tbsp. Chopped parsley
1tsp. Lime juice
½ tsp. Crushed Red Chili
½ tsp. Honey
Pinch of salt
For Cucumber yogurt Sauce
2 tbsp. Cucumber, grated
2 tbsp. Yogurt
1 tsp. Mint leaves, chopped
Salt to taste
1 tsp. Roasted cumin powder
For Garnish; Date Sauce, Mint leaves, lettuce leaves.
METHOD
Cook sweet potato for 3-4 minutes in the microwave on high. Grill direct on flame till skin become brown or grill 15-20 minutes in the oven.
Peel and grate sweet potato in the bowl. Add chopped parsley, lime powder, freshly grounded pepper, grated ginger, salt, sesame seeds and mix well. Make it smooth by mixing both hands. Make lemon sixe ball and fill it with boiled black gram, press gently and finish it round shape.
Heat pan add olive oil and shallow fry till light brown from both sides.
For Salsa, Mix everything in the bowl, and serve in the serving bowl.
For Yogurt sauce mix everything in the bowl and serve in the serving bowl.
Now arrange Stuff Sweet Potato Kebabs in the serving plate with lettuce leaves, and mango salsa and cucumber yogurt sauce. Garnish with mint leaves and serve hot.
