WATER CHESTNUT BISCUIT ROTI WITH YELLOW LENTIL
INGREDIENTS
1 cup Water chestnut flour
2 tbsp. Oats Grounded
1 tsp. Black Pepper
Salt to taste
1tbsp. Butter plus extra for brushing
1 tbsp. Sesame seeds
1 cup yellow lentil, soaked
2 tbsp. Chana Dal, soaked
2 cups water
1 Medium, Tomato, chopped
1 tsp. Ginger chopped
1tsp. Turmeric
½ tsp. Red chili powder
1 tbsp. Parsley chopped
Salt to taste
1 tbsp. Lime Juice
1 tbsp. Olive Oil or Butter optional
METHOD
Mix chestnut flour, oats, salt, pepper, butter and add water to make hard dough. Cover and keep aside.
Pre heat oven at 180 degree centigrade and make coin size biscuit with dough and mark with fork. Press some sesame seeds on each Biscuit Roti and brush with butter. Bake in the oven for 10 to 12 minutes.
Boil both lentil in the pressure cooker with salt and water. Pressure cook for 1-2 whistle. Cool and remove lid add chopped tomato, ginger, turmeric, chili powder. Mix well and cook 6-7 minutes on slow heat. Add olive oil or butter, remove. Remove from fire and add lime juice. Garnish with parsley and serve hot with freshly baked Biscuit Roti.
