MANGO MELON & SPROUT MUNG SALAD: Summer Salad
Summer is here, Enjoy this exotic colorful summer salad made with seasonal produce and crunchy sunflower seeds and sprout Mung.
Serve: 4
INGREDIENTS
1 cup Mango, cubed
1 cup water Melon, cubed
1 cup Rock Melon, cubed
½ cup Sprout Mung
½ cup Mint Leaves, small
2 tbsp. Toasted Sun flower seeds
2 tbsp. Lime Juice
2 tbsp. Honey
Salt & Pepper to taste
Parsley for garnish
Lettuce Leaves for serving
METHOD
Boil water with salt and cook sprout mung for 5-7 minutes. Remove and cool. Melt honey in the microwave for 30 seconds. Add salt, pepper and lime juice, whisk well. Take all fruits in the bowl, mix sprouts and dressing, toss gently. Finely add mint leaves and toasted sunflower seeds and garnish with parsley, Serve immediately on the bed of lettuce leaves.
