COLD SOUP OF WATERCRESS & CUCUMBER :Vegan & Raw
Mild peppery flavored herb Water cress grows near river side is full of iodine, vitamin C and Iron.
It can use in Salad or soup. The juice is slightly bitter because of its peppery taste, so try to blend with carrot beetroot or cucumber; here I tried to add in my Gazpacho style  cold soup.  Try this simple and delicious cold soup to combat hot summers.
The cold soup of watercress and cucumber is really cool, low Cal drink and very suitable for those who are fasting in Ramadan.
INGREDIEN
2 Medium sized Cucumbers, peeled and cubed
1 Plum Tomato, cubed
½ cup Watercress leaves
1 tsp. Fresh Thyme
7-8 leaves of Basil, plus extra for garnish
1 tbsp. Lime juice
1 tbsp. Olive Oil
Salt & Pepper to taste
Ice Cubes, Optional
METHOD
Place all the ingredients except oil and lime juice in the blender jar and blend on high speed until soup is very smooth. Add olive oil and lime juice, and blend again. Adjust the seasoning if required. Pour in the cups, add ice cubes and garnish with this slices of cucumber and basil. Serve cold.

NOTE: Keep cucumber & tomatoes in the fridge for 2-3 hours before making this soup.
