PEPPER, PINEAPPLE SALAD WITH AMARANTH/SALT FREE SALAD
My son, who is very health conscious, he asked me to make some healthy salad without salt & dressing, I checked in my pantry there was Amaranth, slightly roasted and fresh Pineapple, so I decided to make this Salt free Salad. When I served this salad to my gym freak son, he liked it so much, so here is the recipe of this quite filling but light salad. I am sure you will like this Super nutrition and healthy salad because it is good for no puffy look and no water retention.
1 Red Bell Pepper, Thinly Chopped
1 Small Pineapple, fresh, finely sliced
1 Cucumber, finely chopped
½ cup Amaranth, Soaked
½ cup Fresh Coriander, chopped
1 tsp. White Pepper Powder
½ tsp. Maca Powder
1 tbsp. Lime Juice
Boil 2 cups water and boil amaranth seeds for 3-4 minutes. Remove from heat and leave it in the water for 5 more minutes. Drain and keep aside for cooling.
Mix pineapple, red bell pepper and cucumber in the big bowl. Add amaranth, fresh coriander, white pepper, maca powder and lime juice, toss well and chill for 15 minutes before serving. This salt free salad is juicy, sweet and crispy; you will not miss the salt at all because of the combination of pineapple with pepper.
