PEPPER, PINEAPPLE SALAD WITH AMARANTH/SALT FREE SALAD

My son, who is very health conscious, he asked me to make some healthy salad without salt & dressing, I checked in my pantry there was Amaranth, slightly roasted and fresh Pineapple, so I decided to make this Salt free Salad. When I served this salad to my gym freak son, he liked it so much, so here is the recipe of this quite filling but light salad.  I am sure you will like this Super nutrition and healthy salad because it is good for no puffy look and no water retention.

INGREDIENTS

1 Red Bell Pepper, Thinly Chopped

1 Small Pineapple, fresh, finely sliced

1 Cucumber, finely chopped

½ cup Amaranth, Soaked

½ cup Fresh Coriander, chopped

1 tsp. White Pepper Powder

½ tsp. Maca Powder

1 tbsp. Lime Juice

METHOD

Boil 2 cups water and boil amaranth seeds for 3-4 minutes. Remove from heat and leave it in the water for 5 more minutes. Drain and keep aside for cooling.

Mix pineapple, red bell pepper and cucumber in the big bowl. Add amaranth, fresh coriander, white pepper, maca powder and lime juice, toss well and chill for 15 minutes before serving.  This salt free salad is juicy, sweet and crispy; you will not miss the salt at all because of the combination of pineapple with pepper.

RAW PAPAYA CHUTNEY & OAT CRACKERS

I made this chutney with green papaya to compliment Oat crackers. The blended taste of crackers turns good after topping with sweet & tangy papaya Chutney.You can use as a sandwich filler or with any other breads. Here is the recipe of quick & easy Raw Papaya Chutney.

INGREDIENTS

1 Medium sized Raw Papaya, peeled & grated approx. 2 cups

1 cup sugar

1tsp. Oil

1 tsp. Mustard seeds

½ tsp. Turmeric powder

1 tsp. Crushed Red Chilies

1 tsp. Lemon Zest

2 tbsp. Lime juice

¼ cup water

Salt to taste

METHOD

Heat the oil and add mustard seeds to splutter and add turmeric powder and grated papaya, stir. Add salt and water, cover with lid and cook for 2-3 minutes. Remove the lid adds sugar, lemon zest, crushed chilies and cook on medium high heat for 3 – 4 minutes. Add lime juice and remove from heat. Cool and store in the sterilized jar. Serve with oat crackers or any other bread.

As fasting started, here is simple and easy recipe of peanut laddu, try and enjoy.

Makes 10-12 Laddu

INGREDIENTS

2 cups Peanuts, without skin

1 cup Sugar, powdered

2 tsp. cardamom powder

2 tbsp. Ghee or Clarified Butter

4 tbsp. Sesame seeds, dry roasted

 

METHOD

Roast peanuts in the microwave for 2 minutes on high. Cool and grind in the grinder in to fine powder.

Heat the heavy bottom pan and add ghee and peanut powder stir and roast for 3-4 minutes without changing the color. Add cardamom powder and remove from heat. Keep aside to cool it little bit. After 5-7 minutes add sugar and mix well with the help of spoon or hands. Keep sesame seeds in the plate, now divide the mixture in to 10 -12 equal parts and make round shape. Roll each ball in the sesame seeds and keep in the plate. Serve or store in the covered containers. These laddu can be stored for 10-12 days in covered container.

SAMO RICE KHEER WITH ALMOND FLAKES: FASTING FOOD & FESTIVAL OF NAVRATRI

Tomorrow the festival of Navratri will begin Navratri means Nine Nights, end of these nine nights Dusharah will come to mark as a Victory of good over the bad.

In India different state celebrate this festival in different ways. In some of the state people are fasting for nine days.

In my opinion this festival is after the rainy season, Rainy season is affect our digestion system, generally people lost their appetite. Fasting is the correct way to improve the appetite and bring back digestion system on track.  Nine days try to avoid the carbs and eat more fruits, drink lime water and detox the body completely. This is the purpose of Fast. Eat healthy and pray to god is the whole concept of nine days fasting.

In India people are so clever they always search for the alternatives. So for fasting, if rice is prohibited for nine days there are some alternative for that and that is Samo or Sam vat Rice or Moriya Rice. During fasting, Buck wheat flour and water chestnut flour used in place of wheat flour. Likewise Sama rice is the substitute of rice.

Samo Rice belongs to the family of Poaceae, similar to grass. This white color grain looks like broken rice.

I made this Kheer, inspired by the art of substitution. Rice Kheer is traditional dessert, and here is the substitution of that but not in the taste. Happy Navratri to all and have a great nine days.

INGREDIENTS

50 gm. Samo Rice, washed & soaked

1 ½ lt. Milk

125 gm.Sugar

3 tbsp. Almond Flakes plus extra for garnishing

2 tbsp. Pistachio, Finely sliced

Few strands of saffron soaked in warm milk

2 tsp. Cardamom Powder

METHOD

Heat the milk in the large heavy bottom pan. Once it starts boiling add soaked rice and stir continuously.

Cook for 20-25 minutes on slow heat till rice done completely. Add sugar, saffron, cardamom powder and almonds. Stir and simmer for 15 -20 minutes. Remove from heat and cool.

Garnish with pistachio and almond flakes, serve.

INGREDIENTS

1 ¾ Cups All Purpose Flour

1 Cup Powder Sugar

1 Cup Desiccated Coconut

1 tsp. Baking Soda

1 tsp. Baking Powder

½ tsp. Salt

2 tbsp. Maggi Coconut Milk Powder

½ cup Olive Oil

2 tsp. Vanilla Essence

1 tsp. Pink Food Color

100 ml. Warm Water

100 gm White Chocolate, cuts into small squares

METHOD

Preheat the oven to 180 degree centigrade.

Mix coconut milk powder mix with warm water.

In a large mixing bowl, sieve together flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk the coconut milk, oil, vanilla, and pour in the dry mixture.

Mix well and transfer it in the stand mixer and mix well. Add desiccated coconut, white chocolate cubes and pink food color. Gently stir and spoon the batter in the cupcake cases.

Bake for 16-18 minutes or until a cake needle comes out clean. Cool the cupcakes before frosting.

You can use ready-made frosting or eat freshly baked cup cakes with tea.

Amaranth flour is derived from the seeds of the amaranth plant and in India it’s known as Rajgiri Aata.

Amaranth flour is very high in protein, fiber and lysine, essential amino acid. This flour you can eat during the fasting. It looks like bread crumbs and in flavor is grainy and nutty. Try to bake these very crumbly cookies; I am sure you will love it.

 

INGREDIENTS

1 cup Amaranth Flour

1 cup Peanut without skin, dry roasted & powdered

1 cup powdered Sugar

100 gm. Butter

1 tbsp. Cardamom Powder

2 tbsp. Almond sliced

½ tsp. Baking Powder

METHOD

1-Mix butter with sugar till creamy in the mixing bowl. Sieve flour with baking powder and cardamom powder. Combine flour with peanut powder and add this to the butter mixture. Blend well and keep it in the fridge to set for 20 minutes.

2- Pre heats the oven at 180 degree Centigrade.

3- Divide the dough in to 20-24 small balls. Roll each one in the small circle, use cookie cutter to shape it.

4- Place the cookies in the baking tray, press 3-4 almonds sliced in each cookie.

5-Bake the cookies at pre heated oven for 13 -14 minutes or till light brown.

6-Once done cool and store in the jar. Enjoy eggless gluten free cookies with Milk, Tea or Coffee.

Whenever I have lots of left over rice I used to make this capsicum curd rice.  This very Simple but gorgeous looking dish is good for take away in lunch box. Try and enjoy.

INGREDIENTS

2 ½ cups Cooked Rice

1 cup Curd or Yogurt

1 small capsicum, thinly sliced

1 tbsp. Oil

1 tsp. Mustard seeds

5-6 Curry leaves

½ tsp. Red chili, crushed (Optional)

Salt to taste

Pinch of Sugar

Mint leaves for Garnish

METHOD

Mix curd and rice in the mixing bowl. Add sugar & salt in it and mix well. Heat the oil in the pan adds mustard seeds to temper. When it starts crackling add sliced capsicums and curry leaves sauté for 1-2 minutes and remove from heat. Add crushed chilies and pour over curd rice. Mix gently and chill before serving. Garnish with Mint leaves and serve.
