RAW STARTER: GUACAMOLE STUFF CUCUMBER CUPS
Today I am posting a quick vegan starter, to celebrate raw Diet Month. September is the month of raw food diet, and coming 16th of this month is the Mexican Independence day, so I thought to make a simple dish to celebrate both. Mexicans celebrate their country’s Independence Day with food, fireworks & fiesta on September 16. At this special day all the streets of Mexico turns into full of fun, color, dance music and food. Mexican food is very colorful, spicy and tangy. My inspiration of this recipe is the colors of the Mexican flag – red, white and green. Have a refreshing raw starter:
2 Avocados, peeled, pitted & mashed
1 Medium sized Tomato, chopped
1 small Red Bell pepper, very finely chopped
½ cup Parsley finely chopped
1 green chili, finely chopped
2 tbsp. Lime Juice
2tbsp. Coriander leaves, finely chopped
Salt to taste
Wash and cuts Cucumber in the 1 inch roundels. Scope out from the middle and keep it in the fridge to chill. You can peel the skin if you want. I am using with skin to make it more colorful.
In the mixing bowl, mash together the avocados with chopped bell pepper, tomatoes, parsley, chili and coriander. Add lime juice and salt mix well. Keep in the fridge to chill for 20 minutes.
Fill each cucumber cups with guacamole and garnish with parsley and chopped bell pepper. Serve immediately. You can serve remaining guacamole as a dip with this. Let’s celebrate Mexican Independence day with raw starter.
