CAPSICUMS CURD RICE: LEFT OVER MAKE OVER

Whenever I have lots of left over rice I used to make this capsicum curd rice.  This very Simple but gorgeous looking dish is good for take away in lunch box. Try and enjoy.

INGREDIENTS

2 ½ cups Cooked Rice

1 cup Curd or Yogurt

1 small capsicum, thinly sliced

1 tbsp. Oil

1 tsp. Mustard seeds

5-6 Curry leaves

½ tsp. Red chili, crushed (Optional)

Salt to taste

Pinch of Sugar

Mint leaves for Garnish

METHOD

Mix curd and rice in the mixing bowl. Add sugar & salt in it and mix well. Heat the oil in the pan adds mustard seeds to temper. When it starts crackling add sliced capsicums and curry leaves sauté for 1-2 minutes and remove from heat. Add crushed chilies and pour over curd rice. Mix gently and chill before serving. Garnish with Mint leaves and serve.
