SAMO RICE KHEER WITH ALMOND FLAKES: FASTING FOOD & FESTIVAL OF NAVRATRI
Tomorrow the festival of Navratri will begin Navratri means Nine Nights, end of these nine nights Dusharah will come to mark as a Victory of good over the bad.
In India different state celebrate this festival in different ways. In some of the state people are fasting for nine days.
In my opinion this festival is after the rainy season, Rainy season is affect our digestion system, generally people lost their appetite. Fasting is the correct way to improve the appetite and bring back digestion system on track. Nine days try to avoid the carbs and eat more fruits, drink lime water and detox the body completely. This is the purpose of Fast. Eat healthy and pray to god is the whole concept of nine days fasting.
In India people are so clever they always search for the alternatives. So for fasting, if rice is prohibited for nine days there are some alternative for that and that is Samo or Sam vat Rice or Moriya Rice. During fasting, Buck wheat flour and water chestnut flour used in place of wheat flour. Likewise Sama rice is the substitute of rice.
Samo Rice belongs to the family of Poaceae, similar to grass. This white color grain looks like broken rice.
I made this Kheer, inspired by the art of substitution. Rice Kheer is traditional dessert, and here is the substitution of that but not in the taste. Happy Navratri to all and have a great nine days.
50 gm. Samo Rice, washed & soaked
1 ½ lt. Milk
3 tbsp. Almond Flakes plus extra for garnishing
2 tbsp. Pistachio, Finely sliced
Few strands of saffron soaked in warm milk
2 tsp. Cardamom Powder
Heat the milk in the large heavy bottom pan. Once it starts boiling add soaked rice and stir continuously.
Cook for 20-25 minutes on slow heat till rice done completely. Add sugar, saffron, cardamom powder and almonds. Stir and simmer for 15 -20 minutes. Remove from heat and cool.
Garnish with pistachio and almond flakes, serve.
