BROCCOLI WITH BELL PEPPER PESTO: Vegan

Mild and gorgeous dish…..

INGREDIENTS

2 ½ cups Broccoli florets

1 Red Bell Pepper

3 tbsp. Pine nuts

2 tbsp. Olive oil

2 tbsp. Sun dried tomatoes

½ cup Fresh Basil leaves

½ tsp. Chili flakes

Salt & pepper to taste

METHOD

Blanch Broccoli in hot water, strain and keep aside.

Roast bell pepper on direct flame till skin burnt. Cool and peel the skin of pepper. Combine the bell pepper with basil leaves, 2 tbsp. pine nuts, and sun dried tomatoes in the jar of blender and blend till fine paste. Heat the olive oil in the pan and add remaining pine nuts and broccoli florets. Sauté and add bell pepper pesto, cook for 1 minute. Add chili flakes, salt and pepper. Serve warm.
