CAULIFLOWER KEEMA

INGREDIENTS

4 cups grated Cauliflower

1 cup Pea, Frozen

1 tbsp. Ginger paste

3 green Chilies, chopped

1 tsp. Cumin seeds

1 tsp. turmeric Powder

2 tsp. Black Pepper coarsely crushed

2 tsp. Black Cardamom seeds, crushed

2 tbsp. freshly ground dry coriander

1 tsp. Red chili powder

1 tsp. turmeric Powder

Salt to taste

2 tbsp. Pine nuts, slightly roasted

1 tbsp. Lime Juice

½ cup Fresh Coriander, finely chopped

4 tbsp. cooking Oil

METHOD

Heat the water with salt remove from heat, soak grated cauliflower & peas for 2 minutes and drain.

Heat oil in the fry pan adds cumin seeds and crushed black cardamom and black pepper. Soon after Add ginger paste & green chilies and Sauté for 30 seconds and add turmeric and cauliflower & peas. Sauté on medium high heat, add salt and add all dry powders. Cover and cook for 4-5 minutes on slow heat. Remove the lid and cook till it release aroma of all spices. Add lime juice and mix gently. Remove from heat and add coriander leaves, transfer in the serving dish and garnish with roasted pine nuts. Serve with Sesame Naan Bread
