INGREDIENTS

2 cups Mixed Fruits, Raspberry, Blue berries, plums, cherries, chopped

1 ½ cup Plain Flour

½ cup Almond meals

¾ cups Coconuts, freshly grated

1 tsp. Baking Powder

½ tsp. Baking Soda

1 tsp. Clove Powder

½ tsp. Cinnamon Powder

½ tsp. Nutmeg powder

100ml. Oil

100 gm. Sugar, powdered

5-6 Dried Figs, soaked

½ cup raisins

1tbsp. Orange Zest

1 cup Orange Juice

METHOD

Heat the oven at 170 degree centigrade. Sieve flour with baking powder, baking soda, cinnamon powder, nutmeg powder, clove powder.

Chop finely soaked figs and mix with fruits and raisins. Mix oil, sugar, flour and orange juice in the large mixing bowl. Use hand blender to mix it well. Add all remaining ingredients and mix well. Turn in the lined cake tin and bake 45 to 50 minutes or till needle comes out clean. Cool on wire rack. Dust with icing sugar and serve.

SWEET & TANGY PINEAPPLE CHUTNEY

Here is the simple and tasty condiments recipe for Christmas. Serve with scones, bread or as a topping for thin cookies. Enjoy the festival with friends and family.

INGREDIENTS

1 small Pineapple, cuts into small chunks or 2 cups fresh Pineapples cubed

2 Green Chilies, finely chopped

1 tbsp. Oil

½ tsp. Mustard Seeds

1 tsp. Crushed Red Chilies

4 tbsp. Brown Sugar

¾ cup Red Berry juice or mixed berry Juice

1 tbsp. Lime Juice

Salt to taste

METHOD

Heat oil in the sauce pan and add mustard seeds to crackle.  Add Pineapple and chopped green chilies, sauté for 30 seconds. Stir salt and juice and cover with lid, cook for 5-6 minutes. Remove lid and add remaining ingredients and cook till it become thick like chutney. Stir continuously while cooking on slow heat. Cool and store in the satirized jar. It will last well for 15 days in the fridge.

For 10-12 cup cakes

INGREDIENTS

1 cup all-purpose flour

½ tsp. Baking Powder

1.2 tsp. Baking soda

¼ tsp. salt

½ cup Pumpkin puree

½ cup golden brown sugar

¼ cup Grape seeds Oil

2 tbsp. Apple sauce

¼ tsp. Nut Meg powder

¼ tsp. Clove powder

½ tsp. Cinnamon powder

½ tsp. Ground Ginger

1 tsp. vanilla essence

2 tbsp. Soya Milk, optional

2 tbsp. Icing Sugar to dust the cakes

METHOD

Pre heat the oven at 175 degree centigrade. Sieve all dry ingredients twice in the large mixing bowl.

Add oil, pumpkin puree, apple sauce vanilla essence and sugar in it. Use hand blender to mix it well. If mixture is too dry add milk to make cake batter perfect. Pour the batter in the cupcake cases. Bake for 12 -14 minutes or until the tooth pick test. Remove from oven and cool. Dust with icing sugar and serve.

INGREDIENTS

4 Medium Size Sweet potatoes

2 tbsp. Fennel, finely chopped

2 tbsp. Boiled Sorghum seeds

4 tbsp. Olive oil

1 tsp. Ground Cumin

1 tsp. Ground Coriander

1 tsp. Dried Oregano

1 tsp. Soya Sauce

1 tbsp. Lime juice

2 tbsp. Sesame Seeds

METHOD

Pre heat Oven at 200 degree centigrade. Wash and wipe sweet potatoes and bake with skin for 30-35 minutes.

Heat 2 tbsp. oil and gently fry fennel, add cumin, coriander, sorghum seeds, stir. Add salt to taste and soya sauce. Remove from heat. Cut each sweet potato in half-length wise. Scoop out the flash gently and add the flash with sautéed fennel mixture. Add lime juice in it and fill each sweet potato jacket with this mixture. Sprinkle sesame seeds and brush with oil. Bake it for 15 -20 minutes and serve hot.

ORANGE & CARROT SOUP

Serve: 4

INGREDIENTS

1 cup Orange Juice

4 Medium carrots, Peeled & sliced

1 inch Galangal, thinly sliced

½ tsp. Orange Zest

6 Dried Apricot, Soaked

Freshly ground Pepper

Sea Salt to taste

Herbs for garnish, Optional

 2 tbsp. Fresh Cream, Optional

METHOD

Heat 4 cups water in the pan and bring it to boil, add carrots and apricot, galangal in the water. Boil it for 8-10 minutes. Cool and blend in the blender until smooth. Pass this through sieve and add to the pan. Add orange juice, zest, salt and pepper in it. Bring back to the boil and simmer for 5-6 minutes. Remove the soup from heat and serve hot. Garnish with fresh herb and drizzle some cream on it.

1 cup Fresh Pineapple, cubed

1 Banana, chilled

½ cup Fresh Coriander

1tsp. Chia seeds

½ tsp. Mecca Powder

1 tbsp. Honey

1 tsp. Lime Juice

200 ml. Coconut Water, chilled

METHOD

INGREDIENTS

1 ¼ cups Wild Rice

½ cup Walnuts, chopped, extra for garnish

¼ cup Dried Cranberries

2 tbsp. Butter or Oil

2 tbsp. Parsley, finely chopped

2 tbsp. Basil Pesto

2 tsp. freshly ground pepper

2 ½ cups Vegetable stocks or plain water

Salt to taste

10-12  Cherry Tomatoes, halved, for garnish

METHOD

Wash and soak rice in the water for 10-12 minutes. Heat oil in the heavy bottom pan; add walnuts and cranberries to sauté. Add chopped parsley and soaked rice, stir and cook for 1-2 minutes. Add stocks and salt, and cover with lid. Cook this on low heat for 10-12 minutes. Add pepper and pesto gently stir and transfer in the oven proof dish. Bake at 180 degree centigrade for 15 minutes. Garnish with walnuts and Cherry tomatoes. Serve hot.
