WINTER FRUIT CAKE : EGGLESS

As Edith Sitwell said about winter: “winter is the time for comfort, for good food and warmth, for the touch of a friendly hand and for a talk beside the fire: it is the time for home.” I am totally agree with it, winter is the time for nice rich food with family, here is the recipe of winter fruit cake, bake and enjoy the season…

INGREDIENTS

2 cups Mixed Fruits, Raspberry, Blue berries, plums, cherries, chopped

1 ½ cup Plain Flour

½ cup Almond meals

¾ cups Coconuts, freshly grated

1 tsp. Baking Powder

½ tsp. Baking Soda

1 tsp. Clove Powder

½ tsp. Cinnamon Powder

½ tsp. Nutmeg powder

100ml. Oil

100 gm. Sugar, powdered

5-6 Dried Figs, soaked

½ cup raisins

1tbsp. Orange Zest

1 cup Orange Juice

METHOD

Heat the oven at 170 degree centigrade. Sieve flour with baking powder, baking soda, cinnamon powder, nutmeg powder, clove powder.

Chop finely soaked figs and mix with fruits and raisins. Mix oil, sugar, flour and orange juice in the large mixing bowl. Use hand blender to mix it well. Add all remaining ingredients and mix well. Turn in the lined cake tin and bake 45 to 50 minutes or till needle comes out clean. Cool on wire rack. Dust with icing sugar and serve.
