DRIED MANGO MINT BREAD

Another recipe with Mango, I love this fruit, with its unique taste, Enjoy sweet bread made with dried mango & mint leaves.

INGREDIENTS

1 cup Plain Flour

¼ cup Fine Semolina

½ cup sun Dried mango, chopped

1 tbsp. Dried Mint Leaves, crushed

¾ cup Castor sugar

2 tbsp. Butter, unsalted

1 tsp. baking powder

½ tsp. Baking soda

½ cup yogurt

2 tbsp. Mango puree

½ tsp. Nutmeg powder

Pinch of salt

METHOD

Pre heat the oven at 180 degree centigrade.

Sieve plain flour with baking powder and soda.

Mix butter and sugar in the stand mixture till creamy. Add mango puree, yogurt, mint powder, salt and nutmeg powder and blend well.

Add slowly sieved flour and semolina in the butter mixture and mix well.

Transfer the batter in the greased bread tin and bake it for 30-35 minutes. Bake till the top turns golden brown. Remove from the oven and cool before slicing. Serve with tea or coffee.

MANGO & AMARANTH FLOUR HALWA: Fasting Food Special

Today as we are celebrating the festival of Shivratri, here I am sharing the recipe of Mango halwa, with amaranth flour. This is perfect for fasting; if you are not fasting you can replace amaranth with semolina.

INGREDIENTS

½ cup Mango Puree

½ cup (Rajgiri Ka Aata) Amaranth Flour

1 cup Mawa, available at Indian Sweet shop

½ cup Ghee, clarified Butter

¾ cup Sugar

¼ cup Milk

2 tbsp. Almonds, sliced

2 tbsp. Pistachio, sliced

1 tsp. cardamom Powder

6-7 strands, saffron soaked in the warm milk

Silver Leaf, optional

METHOD

Boil Sugar water and milk together in the pan till sugar dissolve. Remove and keep aside. Heat ghee in the heavy bottom pan and add flour, stir and roast the flour till it turns light brown, add mawa and keep stirring for 5-6 minutes.   Mix mango puree and sugar syrup together and add this to the flour mixture. Stir continuously to avoid lumps. Add sliced nuts, cardamom powder, and saffron and mix well. Cook till it starts leaving the edges.

Remove from heat and set in the desired molds and garnish with silver leaf and nuts. Serve hot and cold.

INGREDIENTS

3 Cups Broccoli Florets

2 Small sizes Potatoes, cuts in to cubes

1 tbsp. ginger, chopped

1 tsp. Cumin seeds

1 tsp. Turmeric powder

1 tsp. red Chili powder

2 tsp. freshly grounded coriander powder

1 tbsp. Lime juice

½ tsp. all spice powder (Garam Masala Powder)

2 tbsp. Oil

Salt to taste

2 tbsp. fresh coriander, chopped for garnish

METHOD

Wash the Broccoli florets & potatoes in the water and remove from the water and pat dry. Heat the oil in the pan and add cumin & ginger sauté and add broccoli & potatoes. Stir well and cover with lid and cook on the low heat for 4-5 minutes. Remove the lid, adds salt and stir again. Cover with lid and cook again for 2-3 minutes. Remove the lid and check if the potatoes are done add all the dry spices, mix gently. Cook for 2 more minutes remove from the heat and add lime juice & fresh coriander. Serve hot with Bread or Indian chapatis.

CRUNCHY CAULIFLOWER SALAD FOR DUBAI’S PINK WINTER

Dubai is a great place to live specially in the winter. From November to march, the weather of Dubai is great. It’s like Love in the air. Now the Valentine month is already started, here I am sharing a simple warm salad recipe which you can serve as snacks also. Enjoy the lovely weather and warm comfort food.

INGREDIENTS

1 Cauliflower, medium size, cuts in to small Florets

2 tbsp. Olive Oil

2 tsp. Dried Thyme

1 tsp. Black Pepper, freshly grounded

½ red Bell Pepper, thinly sliced

½ cup Carrot, grated

1 tsp. Lime Juice

1 tbsp. Peanut Powder

1 tbsp. Red Pepper Pesto

Salt to taste

Few Basil Leaves for garnishing

Mint Yogurt Dip for serving, Optional

METHOD

Blanch Cauliflower florets in the salted water for 2 minutes, drain and keep aside.

Heat oil in the pan and add all the seasoning (Black pepper, salt, lime juice, thyme powder, peanut powder) with red pepper slices, toss well and remove from heat. Mix well with cauliflower florets and arrange in the baking tray.

Heat oven at 180 degree centigrade and grill for 15-18 minutes. When cauliflowers done, remove from the oven and toss with Bell peppers Pesto and serve on the bed of grated Carrots.

Garnish with basil and Enjoy the lovely winter of Dubai.
