MANGO & AMARANTH FLOUR HALWA: Fasting Food Special

Today as we are celebrating the festival of Shivratri, here I am sharing the recipe of Mango halwa, with amaranth flour. This is perfect for fasting; if you are not fasting you can replace amaranth with semolina.

INGREDIENTS

½ cup Mango Puree

½ cup (Rajgiri Ka Aata) Amaranth Flour

1 cup Mawa, available at Indian Sweet shop

½ cup Ghee, clarified Butter

¾ cup Sugar

¼ cup Milk

2 tbsp. Almonds, sliced

2 tbsp. Pistachio, sliced

1 tsp. cardamom Powder

6-7 strands, saffron soaked in the warm milk

Silver Leaf, optional

METHOD

Boil Sugar water and milk together in the pan till sugar dissolve. Remove and keep aside. Heat ghee in the heavy bottom pan and add flour, stir and roast the flour till it turns light brown, add mawa and keep stirring for 5-6 minutes.   Mix mango puree and sugar syrup together and add this to the flour mixture. Stir continuously to avoid lumps. Add sliced nuts, cardamom powder, and saffron and mix well. Cook till it starts leaving the edges.

Remove from heat and set in the desired molds and garnish with silver leaf and nuts. Serve hot and cold.
