PISTACHIO & CHOCOLATE CAKE: MOTHER’S DAY SPECIAL

Impress you mom : bake cake and enjoy the day…

INGREDIENTS

1 ½ cups Plain Flour

2 tbsp. Corn starch

1 Cup Powder Sugar

75 gm. Butter

1 tsp. Baking Powder

1 tsp, Orange Zest

Pinch of salt

¼ cup Choco Powder

½ cup Yogurt

2 tbsp. Milk

1 tsp. Vanilla

4 tbsp. Pistachio

METHOD

Grease a 7 inch square Cake tin. Sieve all dry ingredients and keep aside.

Pre heat the oven at 170 degree centigrade. Mix butter with sugar and Choco powder with hand blender. Mix yogurt, vanilla and milk and slowly add remaining ingredients except pistachio. Mix well with hand mixer and add more milk if required.  Add pistachio and pour the mixture in the greased tin and bake the cake for 45 minutes. Check the cake with the skewer. If it comes out clean remove it from the oven. Cool it completely before turning on the plate.

MY NEW FRIENDLY AIR FRYER : DELONGHI : SMART MULTI COOKER

Last Friday a genius kitchen appliance arrived from Jashanmal  Store, suppliers of Delonghi, to my kitchen, as it came I opened the box and read the instruction. There was a recipe book along with it. This is a new appliance for every kitchen because this not only fryer but work as a slow cooker and Oven also. I checked all the parts and understand how to use it.

Next day tried to make sweet potato chips I peeled the sweet potatoes and evenly sliced, I arranged in the fryer and coat all the chips with 1 tbsp. oil only. I set the time about 20 minutes and turn the bottom heat, when I press the button start; I was bit nervous to see the magic of my new friendly fryer. As you can see from outside the chips was turning slightly pink, I was sure about the result. As a naïve, I opened it in 18 minutes. The chips were perfectly done. I sprinkle some salt, black pepper and serve to my husband, and he passed the taste. So this was the first recipe I tried in the Delonghi’s smart Fryer, I will say to this fryer a smart & Genius Fryer because the uniqueness of this fryer.

In this fryer there is a heating element in the bottom as well as for the circulation of heat equally there is a fan on the top. After the success of my first recipe it gave me confidence to try another. So I decided to try to bake salted Cookies called Mathree, made with plain flour and semolina. I made the dough, and divided the dough in to half, I rolled all the Mathree and half I deep fried and half I fried in the Delonghi Fryer. You will amaze to know the result, the taste of Delonghi’s fried was far better than the regular fried one. After this I decide to make samosa & Bread rolls. Both turn well after cooking in the Delonghi’s fryer .I applied oil with the brush only.

Day three made me more confident about the product, so I tried Spring rolls and Thai Veggie parcels.

 

When you fried Spring roll in the regular fry pan it absorb too much oil, but after frying in this the rolls was very crispy and fat free. The taste was exotic because the filling was not disturbed by deep-frying technique. No need to cover my hair as I used to do earlier, when I was frying in the kitchen, the deep frying always makes my hairs oily even after putting the exhaust fan.

Day four, my experiment ideas got wings, so I decided to try something unique. I made gourmet styled Raw Banana, Kebabs and Potato Churros. The End result was fantastic.

Because when you fry delicate Kebabs or cutlets in the regular fry pan, the turning sometimes change the shape the kebabs, but in the smart fryer you don’t need to worry about the change of shape.

In the recipe book of Delonghi fryer is written that you can bake a cake in this fryer, I don’t believe so out of curiosity I made a chocolate cake. I removed the paddle   and pour the cake batter, set the timer and sat on the chair to watch my favorite show on TV. But my conscious does not allow me to sit relax so I want to the kitchen to see whether Cake is rising perfectly or not. But Delonghi proved me wrong the cake rise perfectly and baked well.  I switched off the fryer and left the cake for 15 minute for cooling. After 15 minutes I turn upside down, the cake comes out well. I bake another cake and join with Pineapple jam.I made Cream cheese frosting and cover it from all sides. At Dinner I and my family enjoyed Cream Cheese frosted Chocolate Cake.

VERDICT : If you are planning to buy a slow cooker or fryer, buy this new smart fryer because it is a fryer cum slow cooker, even you can bake cake also. For me this a must buy for every kitchen, no need to deprived from fried tasty food, invest in the healthy cooking device and enjoy the delicious healthy meal everyday… have a fuss free cooking and fat free snacks.

SAFFRON SHEERMAL WAFFLE BUNS

Sheermaal is a popular Persian Bread I made this bread in the style of Waffles.

Makes: 10-12

INGREDIENTS

2 cups Plain Flour

¼ cup Clarified Butter

1/3 cup Luke warm water

2 ½ tbsp. Sugar

½ cup Warm Milk plus 1 tbsp. Extra for soaking saffron strands

½ tsp. saffron Strands

¼ tsp. Sea salt

½ tsp. Cardamom Powder

4 pieces Butter Blocks for glazing

Waffle tray or molds

METHODS

Sieve the flour in the mixing bowl. Add ¼ cup cups clarified butter and sugar to the flour. Roast the saffron slightly and grind in the pastel & mortar. Soak it in the one tbsp. hot milk and keep aside. Mix with the bottom of spoon to release the color & aroma of saffron and add reaming warm milk in to this.

Dissolve yeast with pinch of sugar and warm water. Add this to the flour and warm milk to make dough. Knead well to make smooth dough. Use one butter blocks to make it smoother. Cover with cling film and keep the dough for rise. After 45 minutes, when the dough doubles, knead again and add sea salt & cardamom powder. Make 10-12, balls of equal size and roll with the hands, use waffle mold to give a nice shape. Arrange in the baking tray and brush with butter. Keep it to rise again for 12-15 minutes. Pre heat oven at 200 degree centigrade and bake all the buns for 12- 14 minutes. Remove from the oven, serve hot or cold with butter or jam. These buns are perfect for breakfast, Lunch or dinner times. The aroma & rich color of saffron gives a twist to these buns, Enjoy sweet and salty taste of waffle style buns.

 

CRANBERRY & PISTACHIO BALUSHAHI

Balushahi is a traditional sweet, I made this with stuffing of cranberry & pistachio slices, to add some color to this sweet. Holi is the festival of color, so try to make this Balushahi with colorful Stuffing’s.

 

INGREDIENTS

1 ¼ cups Plain Flour

4 tbsp. Clarified Butter

3 ½ tbsp. Yogurt, cold

¼ tsp. Baking Powder

½ tsp. Cardamom Powder

1 ¼ cups sugar

½ cup Water

2 tbsp. Rose water

2 tbsp. Dried Cranberry, sliced

2 tbsp. Pistachio, sliced

1 ½ Clarified Butter for frying

Gold Leaf & silver balls for garnishing, optional

METHOD

Mix sugar with water and rose water in the pan and boil to make sugar syrup. Boil till you will see two strands in the syrup. Remove from heat and keep aside.

Sieve the flour & baking soda; add clarified butter and cold yogurt to make soft dough. Cover with cling film and rest the dough for 15-20 minutes.

Mix cardamom powder with cranberry & pistachio. Make 14-15 small balls with the dough and fill each with the cranberry filling, Roll each one gently to seal it and press slightly, mark with some molds or forks. Heat clarified butter on low heat and deep fry all these on very low heat till golden brown. Remove and repeat to fry all. Cool and dip each one in the cold sugar syrup. Remove from sugar syrup and garnish with gold leaf or silver bowl. Serve and enjoy the festival of Color.

 

OLIVE & OREGANO BREAD

OLIVE & OREGANO BREAD

Serves: 5-6

INGREDIENTS

2 cups Strong Bread Flour

1 ¼ cups warm water

1 tsp dried yeast

1 tbsp. Olive oil

Pinch of sugar

1 tsp. salt

½ tsp. freshly crushed pepper

2 tbsp. Black Olives, sliced

1 tbsp. Fresh Oregano, chopped

1 tbsp.  Fresh Parsley, chopped

METHOD

Mix warm water with yeast and sugar in the bowl and leave to stand for 5-7 minutes.

Heat the olive oil in the fry pan and fry parsley and oregano lightly for 30 seconds.

Sift the flour and make a well in the center. Add the yeast mixture and olive oil to make dough. Gradually add water and oil to make soft dough. Add more water if necessary to make soft & elastic dough. Mix sliced olives and knead the dough on the floured surface for 5 minutes and place in the bowl. Cover it with cling film and leave in the warm place for 1 ½ hours. Lightly grease bread tin with oil and transfer the dough in the bread tin. Cover it and keep in the warm place for another 20 minutes.

Pre heat the oven at 220 degree centigrade and bake the loaf for 10 minutes, lower the temperature at 200 degree centigrade and bake for 18-20 minutes more. Cool it before serving.
