Balushahi is a traditional sweet, I made this with stuffing of cranberry & pistachio slices, to add some color to this sweet. Holi is the festival of color, so try to make this Balushahi with colorful Stuffing’s.
1 ¼ cups Plain Flour
4 tbsp. Clarified Butter
3 ½ tbsp. Yogurt, cold
¼ tsp. Baking Powder
½ tsp. Cardamom Powder
1 ¼ cups sugar
½ cup Water
2 tbsp. Rose water
2 tbsp. Dried Cranberry, sliced
2 tbsp. Pistachio, sliced
1 ½ Clarified Butter for frying
Gold Leaf & silver balls for garnishing, optional
Mix sugar with water and rose water in the pan and boil to make sugar syrup. Boil till you will see two strands in the syrup. Remove from heat and keep aside.
Sieve the flour & baking soda; add clarified butter and cold yogurt to make soft dough. Cover with cling film and rest the dough for 15-20 minutes.
Mix cardamom powder with cranberry & pistachio. Make 14-15 small balls with the dough and fill each with the cranberry filling, Roll each one gently to seal it and press slightly, mark with some molds or forks. Heat clarified butter on low heat and deep fry all these on very low heat till golden brown. Remove and repeat to fry all. Cool and dip each one in the cold sugar syrup. Remove from sugar syrup and garnish with gold leaf or silver bowl. Serve and enjoy the festival of Color.
