Make Iftar special by making this Shahi Firni for dessert..


Serve: 4-6


1 liter Milk, plus 4 tbsp. extra

4 tbsp. Rice flour

100 gm Sugar

1.2 cup Pistachio, slightly roasted and coarsely crushed

2 tsp. Cardamom Freshly grounded

4 tbsp. Honey

½ tsp. Saffron, soaked in the hot water

Dried Rose buds, for garnishing, optional


Heat honey in the pan to caramelize, once it started to bubble add saffron soaked water in to it, remove from heat and add 1.2 tsp. Cardamom powder.

Boil the milk on slow heat for 10-12 minutes, add sugar and stir.  Mix rice powder with 4 tbsp. milk and mix continuously to avoid lumps. Cook on low heat and stir regularly till it becomes thick runny batter. Add cardamom powder and half of the pistachio. Cool

Set in the desired cups and top with 1 tbsp. saffron honey sauce and pistachio. Garnish with rose petals. Cool for 2-3 hours before serving. Traditionally Firni serves in the mud pots. It gives a unique earthy & rustic flavor, if you have tried to use that for serving Shahi Firni. Enjoy…
