Celebrated with great fervor in North as well as South India, Navratri is a 9-day long festival that is dedicated to the 9 manifestations of Goddess Durga. The tenth day of the festival is commonly referred to as ‘Vijayadashami’ or ‘Dussehra’. Like many other festivals, Navrati too encompasses fasting and then feasting. During the 9 days of Navratri, a special menu is adhered to, abstaining from meat, alcohol and processed food, as the body is set for detoxification.

With respect for tradition, Chef Hoshiyar and his team at Antique Bazaar have specially curated a menu offering a vibrant range of beverages, snacks, mains and desserts which appeals to all palates. North Indian dishes such as Dahi Bhalla Chaat, Arbi Masala, Dahiwali Aloo ki Subzi,  as well as Gujarati Kadhi Pakode, Dhokla, Sabudana Khichdi and much more are on offer. Traditional sweets like Phool Makhane ki kheer and Shrikhand end the Navratri culinary experience.

My First recipe for Diwali 2015 :Day 1

Serve:4

PREP: 5 Hour

Cooking Time: 30 Min.

INGREDIENTS

1 kg. Yogurt

1 cup grated cottage cheese

2 tbsp. Corn Flour

2 tbsp. Bread Crumbs

Salt to taste

Clarified Butter for shallow frying

For stuffing

2 Figs Soaked & Chopped

1 tsp. Grated Ginger

Pinch of Black salt

For Serving

12 Grapes, finely sliced

4 Small Radish, Optional

4 tbsp. date Chutney

2 tbsp. Fresh Coriander, Finely chopped

METHOD

Tie yogurt in the cheese cloth and hung it for 4 hour to remove extra water. After 4 hours remove the thick yogurt and keep it in the fridge for half an hour.

Mix all the filling ingredients and keep aside.

Mix hung yogurt with grated cottage cheese, corn starch and bread crumbs. Add salt and mix gently. Make lemon size ball with the mixture and fill each one with the fillings and flat gently. Heat the flat pan and smear with clarified butter. Shallow fry all Dhahi Kebabs on medium high heat till golden.

Serve hot with date chutney and top with grapes, coriander & radish.

Iftar in the Ramadan Majlis

The Ritz-Carlton, DIFC has commissioned Lebanese designer and muralist Pierre Abboud, to design the interiors of the DIFC Ramadan Majlis, to create a truly memorable experience for guests.  As part of the design, Pierre has created two 12-metre-long murals of the Dubai cityscape that will line the walls, with one representing Dubai’s coastline, including iconic landmarks such as Burj Al Arab, whilst the other fittingly depicts downtown Dubai, including the famous DIFC Gate and Burj Khalifa. Savory ‘Booza’

The star of the show is set to be a variety of Savory ‘Booza’, the Arabic word for ice cream, served as unique condiments to the Falafel Waffle, which proved to be a hit at last year’s Iftar.  The Savory Booza is offered in four popular Ramadan flavors; tahini, beetroot mutable, sweet potato mutable and hummus.  The hotel’s now famous Arabian Sushi station will also return by popular demand, with handmade maki rolls including flavors such as lamb shawarma, hammour, and shish kebab rolls.

A wide selection of traditional Ramadan dishes will also form part of the lavish buffet, including hot and cold mezzeh, and approximately 15 live stations where The Ritz-Carlton, DIFC’s chefs will showcase their creative flair, including ouzi carving, fatat hummus, shawarma and saj stations, along with a wide range of seafood and international dishes to cater to all tastes.

Sohour in The Sunken Garden

An à la carte Sohour will be served daily in The Sunken Garden, offering a range of Middle Eastern cuisine, along with a menu of over 30 flavors of shisha, table seating or private majlis, and live musical entertainment.   Surrounded by a serene landscape of palm trees and a dramatic water fountain, the magical garden remains cool throughout the summer due to its low-level positioning and air conditioning, providing a unique al fresco setting for guests this Ramadan.

Chocolate with Ramadan Flavors

Four delicious new chocolate milk drinks with Ramadan flavors including Dulcey Date, Marrakesh Mint, Opalys Cardamom and Apricot Saffron, will be served hot or refreshingly cold at Sohour, and in Cake, the downtown Dubai hotel’s patisserie and café, throughout the day for those who are not fasting. True to its name, Cake will also offer a range of unique Ramadan cakes, pastries and desserts, including Baklava Tart, Date Delight and Date Walnut Cake throughout Ramadan, as well a mini chocolate fountain for two, flavored with orange, rose or saffron.

MY  VERDICT

Falafel Waffle is the star dish of this Ramadan, it is a must try with creamy, Soft & cool beetroot mutable, sweet potato mutable and hummus Ice Cream.

Ramadan is the month of fasting, blessing, sharing & caring. Keep fast and be healthy, fasting makes to control the addictions, provides tranquility of the heart and mind. It helps to improves blood fat levels, because it promotes to breakdown of fats and helps in weight loss. This year the month of Ramadan is in the summer time, one should keep the body hydrating by drinking 7-8 glass water and take balanced meal. Have Suhour to fill your body with protein and carbs to regulate blood sugar. Avoid fried & sugary food. Jallab is morning drink from Lebanon, Syria and Palestine. This drink is made of date & Grape molasses. You can add soaked almonds, pine nuts or raisins to make more delicious and healthy. Here I am sharing my recipe of Jallab. MANGO & AMARANTH FLOUR HALWA: Fasting Food Special

Today as we are celebrating the festival of Shivratri, here I am sharing the recipe of Mango halwa, with amaranth flour. This is perfect for fasting; if you are not fasting you can replace amaranth with semolina.

INGREDIENTS

½ cup Mango Puree

½ cup (Rajgiri Ka Aata) Amaranth Flour

1 cup Mawa, available at Indian Sweet shop

½ cup Ghee, clarified Butter

¾ cup Sugar

¼ cup Milk

2 tbsp. Almonds, sliced

2 tbsp. Pistachio, sliced

1 tsp. cardamom Powder

6-7 strands, saffron soaked in the warm milk

Silver Leaf, optional

METHOD

Boil Sugar water and milk together in the pan till sugar dissolve. Remove and keep aside. Heat ghee in the heavy bottom pan and add flour, stir and roast the flour till it turns light brown, add mawa and keep stirring for 5-6 minutes.   Mix mango puree and sugar syrup together and add this to the flour mixture. Stir continuously to avoid lumps. Add sliced nuts, cardamom powder, and saffron and mix well. Cook till it starts leaving the edges.

Remove from heat and set in the desired molds and garnish with silver leaf and nuts. Serve hot and cold.

Smoothies are very good option to start the day. It’s a quite filling option and full of nutrients. This Holistic Healthy smoothie is without dairy and sugar, for vegan you can replace honey with agave syrup.

Serve: 2

INGREDIENTS

1 cup Fresh Pineapple, cubed

1 Banana, chilled

½ cup Fresh Coriander

1tsp. Chia seeds

½ tsp. Mecca Powder

1 tbsp. Honey

1 tsp. Lime Juice

200 ml. Coconut Water, chilled

METHOD

Mix all the ingredients in the jar of blender and whizz until smooth and creamy.  Serve immediately in the tall glasses. Have a great morning…

SESAME COATED PEANUT LADDU: FASTING SPECIAL

As fasting started, here is simple and easy recipe of peanut laddu, try and enjoy.

Makes 10-12 Laddu

INGREDIENTS

2 cups Peanuts, without skin

1 cup Sugar, powdered

2 tsp. cardamom powder

2 tbsp. Ghee or Clarified Butter

4 tbsp. Sesame seeds, dry roasted

 

METHOD

Roast peanuts in the microwave for 2 minutes on high. Cool and grind in the grinder in to fine powder.

Heat the heavy bottom pan and add ghee and peanut powder stir and roast for 3-4 minutes without changing the color. Add cardamom powder and remove from heat. Keep aside to cool it little bit. After 5-7 minutes add sugar and mix well with the help of spoon or hands. Keep sesame seeds in the plate, now divide the mixture in to 10 -12 equal parts and make round shape. Roll each ball in the sesame seeds and keep in the plate. Serve or store in the covered containers. These laddu can be stored for 10-12 days in covered container.
