RED VELVET WAFFLE WITH FRESH STRAWBERRIES AND SOUR CREAM

INGREDIENTS

1 cup Ready Made Red Velvet Cake Mix

2 tbsp. Rice Flour

1 tbsp. Beet Root Powder

½ tsp. Vanilla sugar

2 tbsp. Yogurt

Milk for Binding

Cooking spray for greasing the waffle Trays

Strawberries & Sour Cream for serving

METHOD

Mix all the dry ingredients in the mixing bowl and slowly add yogurt and milk to make smooth batter.

Grease waffle trays with cooking spray and heat. Spread the batter evenly in the waffle trays and cook the waffle for 8-10 minutes.  Remove gently and serve with sour cream & strawberries or pour some honey.DSC_0257

Home baked buns are real soft and tasty. Here is fool proof recipe for baking buns at home. I filled these buns with mozzarella, but you can fill with any other types of cheese. Baked with love and enjoy soft tender buns.

INGREDIENTS

3 cups Plain flour

1cup plus 2 tbsp. Water

3 tbsp. Olive Oil

1 tsp. yeast

1 tsp. Sugar

1 cup Mozzarella, grated

Sea Salt to taste

2 tbsp. Butter for brushing

METHOD

Warm water and stir with yeast and sugar. Keep aside for 2 minutes to activate the yeast. Fold flour with water and olive oil. Knead till smooth by hands or in the stand mixer. Cover the dough with cling film and keep aside for 1 ½ hours at the warm place. Once the dough is double add salt and knead again to make it smooth. Divide the dough in to equal portion about 16 pieces. Fill each bun with 2 tsp. grated mozzarella and seal it nicely. Arrange all the buns balls in the baking tray and keep it for 30 minutes. Heat the oven at 180 degree centigrade and brush each bun with melted butter and bake for 18 -20 minutes. Serve warm with soup or grilled vegetables.

Sheermaal is a popular Persian Bread I made this bread in the style of Waffles.

Makes: 10-12

INGREDIENTS

2 cups Plain Flour

¼ cup Clarified Butter

1/3 cup Luke warm water

2 ½ tbsp. Sugar

½ cup Warm Milk plus 1 tbsp. Extra for soaking saffron strands

½ tsp. saffron Strands

¼ tsp. Sea salt

½ tsp. Cardamom Powder

4 pieces Butter Blocks for glazing

METHODS

Sieve the flour in the mixing bowl. Add ¼ cup cups clarified butter and sugar to the flour. Roast the saffron slightly and grind in the pastel & mortar. Soak it in the one tbsp. hot milk and keep aside. Mix with the bottom of spoon to release the color & aroma of saffron and add reaming warm milk in to this.

Dissolve yeast with pinch of sugar and warm water. Add this to the flour and warm milk to make dough. Knead well to make smooth dough. Use one butter blocks to make it smoother. Cover with cling film and keep the dough for rise. After 45 minutes, when the dough doubles, knead again and add sea salt & cardamom powder. Make 10-12, balls of equal size and roll with the hands, use waffle mold to give a nice shape. Arrange in the baking tray and brush with butter. Keep it to rise again for 12-15 minutes. Pre heat oven at 200 degree centigrade and bake all the buns for 12- 14 minutes. Remove from the oven, serve hot or cold with butter or jam. These buns are perfect for breakfast, Lunch or dinner times. The aroma & rich color of saffron gives a twist to these buns, Enjoy sweet and salty taste of waffle style buns.

 

OLIVE & OREGANO BREAD

OLIVE & OREGANO BREAD

Serves: 5-6

INGREDIENTS

2 cups Strong Bread Flour

1 ¼ cups warm water

1 tsp dried yeast

1 tbsp. Olive oil

Pinch of sugar

1 tsp. salt

½ tsp. freshly crushed pepper

2 tbsp. Black Olives, sliced

1 tbsp. Fresh Oregano, chopped

1 tbsp.  Fresh Parsley, chopped

METHOD

Mix warm water with yeast and sugar in the bowl and leave to stand for 5-7 minutes.

Heat the olive oil in the fry pan and fry parsley and oregano lightly for 30 seconds.

Sift the flour and make a well in the center. Add the yeast mixture and olive oil to make dough. Gradually add water and oil to make soft dough. Add more water if necessary to make soft & elastic dough. Mix sliced olives and knead the dough on the floured surface for 5 minutes and place in the bowl. Cover it with cling film and leave in the warm place for 1 ½ hours. Lightly grease bread tin with oil and transfer the dough in the bread tin. Cover it and keep in the warm place for another 20 minutes.

Pre heat the oven at 220 degree centigrade and bake the loaf for 10 minutes, lower the temperature at 200 degree centigrade and bake for 18-20 minutes more. Cool it before serving.

DRIED MANGO MINT BREAD

Another recipe with Mango, I love this fruit, with its unique taste, Enjoy sweet bread made with dried mango & mint leaves.

INGREDIENTS

1 cup Plain Flour

¼ cup Fine Semolina

½ cup sun Dried mango, chopped

1 tbsp. Dried Mint Leaves, crushed

¾ cup Castor sugar

2 tbsp. Butter, unsalted

1 tsp. baking powder

½ tsp. Baking soda

½ cup yogurt

2 tbsp. Mango puree

½ tsp. Nutmeg powder

Pinch of salt

METHOD

Pre heat the oven at 180 degree centigrade.

Sieve plain flour with baking powder and soda.

Mix butter and sugar in the stand mixture till creamy. Add mango puree, yogurt, mint powder, salt and nutmeg powder and blend well.

Add slowly sieved flour and semolina in the butter mixture and mix well.

Transfer the batter in the greased bread tin and bake it for 30-35 minutes. Bake till the top turns golden brown. Remove from the oven and cool before slicing. Serve with tea or coffee.

BASIL & CHEESE DINNER BUNS

Yesterday I baked these flavored buns, the combination of basil and cheese with carom seeds makes its super flavored buns. Here is the fool proof recipe of flavored buns. These buns are perfect for breakfast too.

FOR MAKING 10-12 ROLLS

INGREDIENTS

3 cups Organic Bread Flour

4 tbsp. Cheese, grated

3 tbsp. fresh Basil, roughly chopped

2 tbsp. Olive oil

1 cup plus extra 1tbsp. warm water

2 tbsp. Sugar

1 ½ tsp. Salt

1 tsp. Carom Seeds

2 tsp. Dry Yeast, active

1 tbsp. Red Chili flakes

2 tbsp. Sunflower seeds

Butter for glazing and serving

METHOD

In the big bowl take flour and make a well in the middle. Add all the ingredients step wise: Oil, Basil, and Sugar, salt, carom seeds, chili flakes and gradually warm water to make dough. You can use dough mixing machine, but I mixed it with hands. Add 1 tsp. water more if required. Finely mix with cheese and grease the dough ball with oil and cover it with cling film. Place in the warm place to rise.

After 2 hours grease both the hands with butter and divide the dough into 10-12 equal portions. Shape in to a ball and press 4-5 sunflower seeds on the top in each bun. Set in the tray or muffin mold and keep it again at warm place for 30-40 minutes.

Set oven at 200 degree centigrade and bake for 20 minutes. Remove and brush with Butter and serve with jam or butter.

VEGAN HOME BAKED DINNER ROLLS

VEGAN HOME BAKED DINNER ROLLS
Homemade bread or dinner rolls are not so difficult to make. The only trick is use good quality of yeast & flour. If you are not vegan you can use butter instead of oil while making dough.
INGREDIENTS
4 cups All-purpose Flour
1 ½ Cups Water
3 tbsp. Oil plus extra for brushing
1 tbsp. Sugar
1 ½ tsp. Salt
4-5 gm. Dry Yeast
2 tbsp. Sesame seeds
METHOD
Sift flour in the large bowl. Combine with salt, sugar and yeast.
Lukewarm water and add to the flour. Use both hands to mix it properly. Knead the dough 5-6 minutes to create elasticity, add oil and knead again to make smooth dough. Place the dough in the greased bowl and cover with cling film. Keep it in the warm place.
After 3-4 hours dough will be double in size. Punch down again and divide the dough in to 8-10 portions. Roll with hands and makes round balls slightly bigger than lemon. Place on baking tray and dab sesame seeds on each roll. Flatten each ball with finger and spread little oil on it. Set rolls aside until they double in size about 20-25 minutes.
Preheat oven at 200 degree Centigrade. Bake Dinner rolls for 20-23 minutes. Serve warm with Soup & main course.
