Yesterday I made this not so spicy Red Chili Chutney with roasted peanuts and sesame seeds, this gorgeous looking chutney are perfect condiments for all types of Kebabs, Cutlets, momos and roasted vegetables. INGREDIENTS

100 gm. Red Chilies, dried

½ cup Roasted skin less peanuts

2 tbsp. Sesame seeds

2 tbsp. Oil

1 tsp. Ginger paste

1 tbsp. Lime juice

Salt to taste

METHOD

Remove the top of dried chilies and deseed them. Boil the chilies in the hot water for 10-12 minutes or till soft.

Discard the water and drain completely.

Mix chilies with roasted peanuts, sesame seeds and grind in the grinder to make smooth paste.

Hot oil in the pan and sauté the ginger paste and add grinded chili paste. Add salt to taste and cook this it become little thick.  Remove and add lime juice.

Cool and store in the jar with lid.

You can store this Red chili chutney in the fridge for up to 7-8 days.

Indian cuisine is famous for its spiciness and aromatic flavors. The spices are used for making each dish aromatic and tasty. In Indian cuisine spices played a unique role for giving a distinct flavor. Spices are good for digestive system and useful for metabolic rate.

TURMERIC POWDER:

A rich yellow color powder Turmeric is a rhizome; stem grows under the soil like ginger. Turmeric powder is made of dried turmeric. This super antiseptic spice has high antioxidant value. Commonly used in mostly all the Indian Curries. It gives very nice yellow color.

CORIANDER POWDER:

Second most commonly used spice is Dry coriander powder. To bring out the fragrance in coriander seeds, slightly roast the seeds. Put them in a dry heavy bottom pan and set over medium heat for a few minutes until they become fragrant. Cool and grind the whole seeds to make powder. Store this in the clean and dry jar. Add this to enhance the taste of curry. Coriander seeds are anti-diabetic and good source of dietary fiber.

RED CHILI POWDER:

Red chili powder is made from hot red chilies that have been dried and ground. Indian food is famous for its spiciness. Chili powder adds heat and Sharpe flavor to the dish. Add this to any dish as per taste.

MANGO POWDER:

Dry mango powder is very popular with the name Amchur.It is in powder form made with dried mango. It gives tangy and citrus taste to the dish. This is the best substitute of tamarind and lemon. Mango powder is the best source of Vitamin A, C and E and helps to keep the balance and smooth function of hormonal system in the body. It can be used to flavor kebabs, curries, dry curry, barbecue and grilled dish etc.

GARAM MASALA: Mix spice powder of Clove, cumin, cardamom, pepper and cinnamon is ‘Garam Masala’ in Hindi. Generally, Garam Masala is added at the last step of cooking to any dish or curry. The role of adding this aromatic spice to enhance the flavor. You can grind it easily at home. Check my recipe of Garam Masala.

MAKE YOUR OWN GARAM MASALA

Make your own garam masala; here I am sharing my own version of making garam Masala at home easily. Generally Garam Masala is used to make the dish aromatic and fragrant. It enhances the taste of the dish. Commonly used in North Indian Cuisine. This is a quick and easy recipe of making this masala, a very aromatic spice blend to use for curries, kebabs and making Biryanis.

 

INGREDIENTS

2tbsp.Cumin seeds

2tbsp. Black Pepper

8 Green Cardamoms, skin removed

4Black Cardamoms, skin removed

1 sticks of Cinnamon

10 Cloves

1/2 Nutmeg grated

2-3Mace flowers

4 Bay leaves, small size

2 star anise

METHOD-

1-Heat a pan and remove from fire add all these spice to this pan and keep it for 10 minutes to release aroma.

2-Dry grind all these spices in the mill till fine powder.

3-Place this mix in an airtight container, and store in a cool, dry place.

4-To make it more strong you can add 1tsp. Ground ginger powder also.

GINGER –

GINGER –

Ginger is an underground stem (rhizome) is used as a spice and also as a medicine. The color of ginger is pale yellow .Best quality of ginger is from Kenya or Jamaica.  It can be used fresh, dried and powdered, or as a juice or oil. Ginger has a peppery flavor.

Ginger is rich in magnesium, vitamin B 6 and vitamin C. It also contains calcium, phosphorus, copper, zinc and iron in small amounts.

Mostly used for digestion. One of the chemicals in ginger is also used as an ingredient in laxative, anti-gas, and antacid medications. In foods and beverages, ginger is used as a flavoring agent.

It’s available all the season and everywhere. For selecting the right ginger, look for smooth skin. Ginger also available dried and ground in the spice section. Fresh ginger will keep for around 2 weeks in the fridge.

STAR ANISE-

 STAR ANISE

As the name suggests the shape of this china born spice is star. This is one of the ingredients of CHINESE Five Spice Powder; star anise is used to flavor tea, marinades, and soups. It is integral to the traditional Vietnamese soup.

Star anise can be used whole or ground. When whole, it usually is added to liquids destined for a slow cooking or just for infusing the aroma. It usually is removed and discarded from the dish before serving. Ground star anise is more versatile.  Mix with cinnamon & cardamom for a very special taste and aroma.

In my cooking I mixed it with cinnamon stick to marinade fruits or vegetables.

For Kebabs or making some stuffing, I usually ground it with Cumin seeds, cardamom and pinch of mace, for enhancing the taste of the dish.
